Cookie Squares: Chocolate Nut

- 1 1/2 sticks butter (3/4)
- 3/4 cup sugar
- 1 1/4 cups flour
- 2 tablespoons heavy cream
- 1 3/4 cups Pecans or Walnuts, coarsely chopped
- 1 cup shredded coconut
- 4 oz. Semi-Sweet Chocolate, coarsely chopped

- 1 pound chicken wings
- 4 shallots, sliced
- 1 cup dry white wine
- 1 carton chicken stock
- 1 6 to 7 pound roasting chicken

- 2 4 oz. truffle butter
- 1 1/2 pounds of small potatoes
- 1 pound shitake mushrooms,stemmed or whole crimini mushrooms
- 3 to 4 carrots large chopped
- 1 fennel, sliced thick
- 1 large onion sliced thick
- 3 thick bacon slices, cut into 1/2 inch pieces
- 1 cup frozen peas
- 1/4 stick butter

So I got bored and decided to revise something, yet again! Only this time I hit gold
- White Chocolate Sauce:
- 1 large loaf of egg raisin bread
- 6 extra large eggs
- 1/2 teaspoon grated fresh nutmeg
- 1/2 teaspoon of vanilla
- 1/4 cup sugar
- 2 1/2 cups half and half
- shredded coconut
- pecans
- 1/2 cup white chocolate shavings or good chips
- 1/2 to 3/4 cup of heavy cream
- Melt chocolate in microwave or in a bowl over a saucepan of simmering water, then add cream and stir until completely creamy.
Sauce: Caramel

To a pot, add sugar and water and cook over low heat for about 5 minutes to 10 minutes
- 1 1/2 cups sugar
- 1/3 cup water
- 1 1/4 cup heavy cream
- 1/2 teaspoon vanilla

- 2 teaspoons fresh squeezed lemon juice
- 2 tablespoons minced dill
- 1 scallion, minced (white and green)
- 1 tablespoon milk, half and half or cream
- 1/4 teaspoon salt
- pepper
- 3-1/3 oz slamon roe
- Potato chips

- Sauce:
- 1/4 cup sugar
- 2 large egg yolks
- 1 cup half and half
- 2 tablespoons grated lemon peel
- 1/2 teaspoon fresh lemon juice
- 1/4 teaspoon vanilla extract
- Topping:
- 3/4 cup sugar
- 3 tablespoons water
- 2 large Anjou pears, peeled, cored, cut into thin wedges
- Cake:
- 1 1/2 cups flour
- 1 tablespoons baking powder
- 1 cup plus 2 tablespoons sugar
- 1 stick plus 1 tablespoon butter, room temperature
- 2 large eggs
- 1 tablespoon grated lemon peel
- 6 tablespoons whole milk
- 3 tablespoons brandy
- 6 tablespoons finely chopped toasted walnuts
