APPLE CRISP DELIGHT

This was a standard dessert every fall when the new crop of apples was available
- 6 - 8 apples, cored and sliced
- 1/2 c. butter or oleo
- 1 c. sugar
- 3/4 c. flour
- 1 tsp. sugar
BAKED PINEAPPLE

- 1 large can pineapple chunks (drained)
- 1 small can crushed pineapple
- 1 stick margarine, melted
- 1 c. cream (half and half or evaporated milk)

- 1 c. sour cream
- 1/2 c. salad dressing (Miracle Whip)
- 1 pkg. original ranch style dressing (.4 oz. size)
LIME JELLO SALAD

Beat cream cheese till smooth and fluffy
- 1 6-oz. pkg. lime Jello
- 2 c. boiling water
- 1 1/2 c. cold water
- 1 8-oz. pkg. cream cheese
- 1 can mandarin oranges
- 1 can crushed pineapple
TORTELLINI SALAD WITH BROCCOLI, MUSHROOMS AND TOMATOES

- 4 c. broccoli, florets, fresh
- 9 oz. pesto tortellini (Joe used 3 cheese tortellini)
- 8 Tbs. extra-virgin olive oil, divided
- 4 oz. small mushrooms, quartered
- 1 c. pitted ripe olives
- 1 c. grape or cherry tomatoes
- 3 cloves garlic, minced
- 3 Tbs. fresh Italian parsley, finely chopped
- 3 Tbs. fresh basil, chopped
- 1/2 tsp. salt
- 1/2 tsp. pepper, freshly ground

- Splash of sweet and sour mix
- Splash of pineapple juice
- 3 “counts” of triple sec
- 4 “counts” of Raspberry Stoli Vodka
- Splash of champagne
- Muddled raspberries
CHOCOLATE MAYONNAISE CAKE

Preheat oven to 350° F. Combine in a bowl the sugar, flour, cocoa and soda

- 6 Tbs. cocoa
