One of the family restaurants still in Fort Wayne is Casa's--now in various locations throughout the city

  • Dressing:
  • 6 anchovies
  • 8 oz. wine vinegar
  • 3/4 tsp. oregano
  • 1 1/2 tsp. pepper
  • 1 Tbs. salt
  • 1 1/4 oz. sugar
  • 1 1/2 tsp. garlic salt
  • 1/4 c. cornstarch
  • 1 pint (16 oz.) oil
  • Blend the first 8 ingredients in a blender. Pour in oil in a stream.
  • Salad:
  • Iceberg and romaine lettuce, torn
  • Sweet red pepper, chopped
  • Green onions, chopped
  • Parmesan, Romano, provolone and mozzarella cheeses, grated
  • Croutons and bacon pieces

  • 1 can crushed pineapple, undrained
  • 1 small container Cool Whip
  • 1 small container of cottage cheese

Combine all the ingredients, except half the cheese

  • 1 1/2 cups rice, uncooked
  • 1 (16 ounce) cans diced tomatoes, undrained
  • 1 (16 ounce) cans black beans, undrained
  • 3 garlic cloves, minced
  • 1 large onion, diced
  • 2 teaspoons oil
  • 1 cup cottage cheese
  • 1 (4 ounce) cans green chilies, drained
  • 2 cups shredded monterey jack cheese, divided

Mix juices with the cooled sugar water and freeze

  • 4 c. sugar
  • 6 c. water
  • Boil together for 3 minutes and refrigerate until cold.
  • 1 can (46 oz.) pineapple juice

  • 5 bananas, mashed.
