MIGHTY LEMON DROP

- 6 oz. lemon flavored vodka (Citron)
- 2 oz. triple sec
- 4 Tbs. freshly squeezed lemon juice
- 2 tsp. simple syrup (equal amounts of sugar and water heated until sugar dissolves)
PAN ROASTED VEGETABLES

- 1/2 tsp. thyme leaves
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 c. cauliflower flowerets
- 2 c. broccoli flowerets
- 2 c. carrots, cut into small strips
- 2 small onions, quartered
CHICKEN ROMANOFF

- 1 (6-oz.) pkg. egg noodles
- 1 (12-oz.) carton small-curd cottage cheese
- 1 (8-oz.) carton sour cream
- 3/4 c. chopped green onions
- 2 Tbs. margarine, melted
- 1 clove garlic, crushed
- 1/8 tsp. pepper
- 6 boneless, skinless chicken breast halves
- 4 oz. Monterey Jack cheese, sliced
- 2 eggs, beaten
- 1 c. fine, dry bread crumbs
- 1/3 c. margarine
- 1 chicken-flavored bouillon cube
- 1 c. boiling water
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 2 Tbs. margarine
- 2 Tbs. flour
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 (4-oz.) can sliced mushrooms, drained
CHERRY BERRY PIE

- Pie Crust:
- 1 10 oz. pkg. frozen red raspberries, thawed
- 1 can tart red cherries
- 3/4 c. sugar
- 3 tbs. cornstarch
- 1/4 tsp. salt
- Few drops red food coloring
- Pastry for 2-crust 9-inch pie (see below)
- 2 c. flour
- 1 c. shortening
- 1 tsp. salt
- 5 Tbs. water
ZUCCHINI CASSEROLE

Cook ground beef, sausage, or cut up chicken pieces 4-5 minutes or until done, stirring two or three times
- 1 lb. ground beef, sausage, or chicken
- 1 1/2 lbs. zucchini, sliced
- 1 small onion, chopped
- 2 Tbs. butter
- 1 can (4 oz.) diced green chiles
- 3 Tbs. flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 1/2 c. (6 oz.) shredded Cheddar cheese
- 1 egg
- 1 cup small curd cottage cheese
- 2 Tbs. snipped fresh parsley
- 1/2 c. Parmesan cheese
TROPICAL FRUIT SALAD WITH RUM ZABAGLIONE

- 4 kiwifruit
- 1 pineapple
- 2 mangoes
- RUM ZABAGLIONE
- 1/2 c. pineapple juice
- 6 egg yolks
- 1/3 c. sugar
- 3 Tbs. white rum or coconut rum
POTATO CASSEROLE

- 20 oz. pkg. frozen hash browns
- 6 oz. cooked ham, cubed
- 10 oz. pkg. frozen spinach, thawed and drained
- 1 can cream of celery soup
- 1 c. sour cream
- 1/8 tsp. nutmeg
- 8 oz. (2 c.) shredded Cheddar cheese
FROZEN FRUIT SALAD

- Blend together until smooth, then put aside:
- 8 oz. cream cheese
- 3/4 c. sugar
- Mix together:
- 1 (10 oz.) carton frozen strawberries, thawed (with liquid)
- 1 can (20/21 oz.) crushed pineapple
- 1/2 c. pecans
- Fold into the above fruit mixture:
- 1 carton (8 oz.) Cool Whip
Chicken Breasts in Caper Cream Sauce

Season chicken breasts with lemon pepper, salt, dill weed, and garlic powder
- 4 boneless, skinless chicken breast halves
- 1 teaspoon lemon pepper
- 1 teaspoon salt
- 1 teaspoon dried dill weed
- 1 teaspoon garlic powder
- 3 tablespoons butter
- 1 cup whipping cream
- 2 tablespoons capers, drained and rinsed
DEEP DARK CHOCOLATE CAKE

- 1 3/4 c. all-purpose flour 1 c. milk
- 3/4 c. Hershey’s Cocoa 1/2 c. vegetable oil
- 1 1/2 tsp. baking powder 2 tsp. vanilla extract
- 1 1/2 tsp. baking soda 1 c. boiling water
- 1 tsp. salt
- One-Bowl Buttercream Frosting (below)
- One-Bowl Buttercream Frosting
- 6 Tbs. butter or margarine, softened
- 2 2/3 c. confectioners’ sugar
- 1/2 c. Hershey’s Cocoa
- 1/3 c. milk
- 1 tsp. vanilla extract
