MUSHROOM SPREAD

Peg's recipe
- 2 Tbs. butter or margarine
- 2 Tbs. sliced green onion
- 1 Tbs. flour
- 1 pkg. (8 oz.) fresh mushrooms, coarsely chopped
- 2 Tbs. dry vermouth
- 1/4 c. toasted chopped almonds
- 2 Tbs. grated Parmesan cheese
BROCCOLI BACON QUICHE

- 6 slices bacon
- 6 eggs
- 1 1/2 c. half & half cream
- 1 1/2 c. cheddar cheese
- 2 c. broccoli flowerets
- 2 oz. pimiento or red pepper
- Salt & pepper to taste
CRUNCHY CARAMEL APPLE PIE

- 1 unbaked 9" pie shell
- 28 vanilla caramels
- 2 Tbs. water
- 4 c. peeled, sliced apples
- 3/4 c. flour
- 1/3 c. brown sugar
- 1/4 tsp. cinnamon
- 1/3 c. butter
- 1/2 c. chopped pecans
5 CUP SALAD

Mix all the ingredients together and refrigerate for 2 – 3 hours before serving
- 1 c. sour cream
- 1 c. pineapple segments
- 1 c. mandarin orange segments
- 1 c. small marshmallows
- 1 c. coconut
- Nuts
RICH SHORTCAKE

Sift dry ingredients; cut in shortening until mixture is like coarse crumbs
- 2 c. flour
- 1/2 tsp. salt
- 4 tsp. baking powder
- 1 Tbs. sugar
- 1/3 c. shortening
- 1 well-beaten egg
- 1/2 c. milk
BITTERSWEET CHOCOLATE COATED TRUFFLES

Microwave chocolate 2 1/2-3 minutes on medium
- 1 bar (4 oz.) Ghiradelli bittersweet chocolate
- (I use 3/4 c. Ghiradelli bittersweet chips)
- 2 Tbs. butter, cut-up
- 2 Tbs. heavy whipping cream
- 1 1/2 to 2 Tbs. liqueur, any flavor

GERMAN CHOCOLATE OATMEAL CAKE

- Coconut-Nut Topping:
- 1 c. quick-cooking rolled oats
- 1 3/4 c. water
- 1 bar (4 oz.) German sweet chocolate
- 1/2 c. butter or margarine
- 1 c. sugar
- 1 c. brown sugar
- 3 eggs
- 1 tsp. vanilla
- 1 1/2 c. flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 c. flaked coconut
- 2/3 c. brown sugar
- 1/3 c. chopped nuts
- 1/3 c. butter or margarine
- 2 tbs. light cream of milk
SEVEN SEAS CASSEROLE

Combine soup, water, salt, onion and pepper
- 1 can cream of celery soup
- 1 1/3 c. water
- 1/4 tsp. salt
- 1/4 c. chopped onion
- Dash pepper
- 1 1/3 c. Minute Rice
- 1/1 2 c. frozen peas, thawed
- 1 can (7 oz.) tuna, drained
- 1/2 c. grated cheddar cheese
KEY LIME RUM CAKE

- 1/2 cup shortening
- 2 cups sugar
- 5 eggs
- 3 cups flour
- 1/2 tsp. baking powder
- 1 cup milk
- 2 Tbs. rum
- 1 Tbs. grated key lime zest
- 2 tsp. key lime juice
- 1 1/2 tsp. vanilla extract
- 1/2 tsp. lemon juice
- 1/4 cup sugar
- 1/4 cup butter
- 2 Tbs. key lime juice
- 3 Tbs. rum
