BLUEBERRY OAT SCONES

(Janet’s recipe)
- SCONES:
- 1 1/2 c. flour
- 3/4 c. quick-cooking rolled oats
- 1/3 c. sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1/4 tsp. nutmeg
- 1/3 c. butter
- 1 egg
- 1/2 c. orange juice
- 1/2 tsp. grated orange peel
- 1 c. fresh or frozen blueberries, unthawed
- TOPPING:
- 1 Tbs. margarine, melted
- 2 Tbs. sugar
TGI FRIDAY’S SPINACH DIP

Combine all ingredients. Place in shallow casserole dish
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1/2 cup grated parmesan cheese
- 1/2 cup grated mozzarella cheese
- 1-2 tsp. minced garlic
- 1 pkg. frozen spinach, thawed and squeezed of its juices
- 1 (14 ounce) can of artichoke hearts, chopped
SPINACH BARS

- 1/4 cup butter
- 2 pkgs. Frozen spinach, chopped, thawed and squeezed dry
- 3 eggs
- 1 tsp. baking powder
- 6 medium mushrooms, chopped
- 1 small onion, minced
- 1 tsp. salt
- 1 lb. Cheddar cheese, grated.

BLUEBERRY COFFEE CAKE

- Streusel:
- 1/4 c. butter, softened
- 3/4 c. sugar
- 1 egg
- 2 c. flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. milk
- 2 c. fresh blueberries
- Streusel (recipe follows)
- 1/2 c. brown sugar
- 3 Tbs. flour
- 1 Tbs. cinnamon
- 3 Tbs. butter
- 1/2 c. chopped pecans
- Combine sugar, flour, and cinnamon in bowl. Cut in utter with pastry blender until mixture resembles coarse meal.
- Stir in pecans

POMEGRANATE-CHERRY ROYALE

In a blender combine juice, crème de cassis, brandy And ice
- 2 Tbs. pomegranate cherry juice
- 1/2 oz. crème de cassis
- 1/2 oz. cherry brandy
- 2 ice cubes
- 2 oz. chilled sparkling wine
RICE KRISPIE BARS
