Crockpot Leeky Potato Soup

If you've never worked with leeks before, let me walk you through the steps
- 6 slices of bacon, chopped
- 2 leeks, chopped (just use the light green & white parts)
- 1 (32 oz.) container, chicken broth
- 2 cups water
- 5 medium potatoes, peeled and cubed
- 1 cup carrots, diced
- 1 cup celery, diced
- 1/2 tsp. dried dill weed
- 1 tsp. garlic powder
- salt & pepper, to taste
- 2 cups half & half
- 1/2 cup all-purpose flour
- Garnish: Shredded cheddar cheese, bacon pieces
White Chocolate Peanut Butter Krispies

In a large bowl, combine cereal, peanuts and marshmallows
- 2 cups Rice Krispies cereal
- 2 cups dry roasted peanuts
- 2 cups miniature marshmallows
- 1 cup peanut butter
- 2 pounds white chocolate chips (2 12-oz packages plus 1 1/3 cup)
Orange Walnut Candy

In a bowl, combine the sugar, wafer crumbs, orange juice concentrate and butter
- 3-3/4 cups confectioners' sugar
- 1 package (12 ounces) vanilla wafers, crushed
- 1 can (6 ounces) frozen orange juice concentrate, thawed
- 1/2 cup butter, melted
- 1-1/2 to 2 cups ground walnuts
Baked Monte Cristo Sandwiches

Heat the oven to 400°F
- 1 egg
- 1 sheet Puff Pastry, thawed
- 4 thin slices deli Black Forest ham
- 4 slices deli Swiss cheese (about 4 ounces)
- Confectioners' sugar
- Pure maple syrup
Raspberry Breakfast Bars

These are more like a raspberry sandwich cookie, yet less sweet than a typical dessert
- CRUST & CRUMB:
- 1 1/2 cups all-purpose flour
- 1 cup dark brown sugar, firmly packed
- 1 1/4 cups rolled oats
- 3/4 teaspoon salt
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 3/4 cup (1 1/2 sticks) unsalted butter, cut into 1-inch pieces
- RASPBERRY FILLING:
- 1/4 cup dark brown sugar, firmly packed
- 1 tablespoon lemon zest, grated
- 1/2 teaspoon cinnamon
- 2 tablespoons all-purpose flour
- 1 pound raspberries, fresh or frozen
- 1/4 cup fresh lemon juice
- 2 tablespoons unsalted butter, melted and cooled
Coconut Shrimp with Orange Marmalade

In a large bowl, combine coconut and bread crumbs and season with salt and pepper
- Dipping Sauce:
- 2 cups shredded sweetened coconut
- 2 cups bread crumbs
- Kosher salt and freshly ground black pepper
- 2 cups all-purpose flour
- 4 large eggs, beaten
- 24 large shrimp, peeled and deveined
- Vegetable oil, for frying
- 1/2 cup orange marmalade
- 1 to 2 tablespoons dark rum
Apple Cider Margarita

Add a few spoonfuls of cane sugar, coarse sugar and cinnamon to a plate
- 1 ounce Grand Marnier
- 1 ounce gold tequila
- 5-6 ounces sweet apple cider

- 1 can chipotle chiles in adobo (I used about 3/4 of a can)
- 6 1/2 cups granulated sugar
- 1/4 cup lemon juice
- 1 package powdered pectin
Baked Taco Ring

Preheat oven to 375°. Brown the ground beef, then drain
- 1 lb. ground beef
- 1 package (1.25 oz) taco seasoning mix
- 1 c. (4 oz) shredded cheddar cheese
- 2 tbs water
- 2 8-oz packages refrigerated crescent rolls
- 1 medium green bell pepper
- 1 c. salsa (optional)
- 3 c. lettuce, shredded (we used more — 3/4 a head)
- 1 medium tomato, diced
- 1/4 c. onion, chopped
- 1/2 c. pitted ripe olives
- sour cream
Pineapple Salsa

In a large bowl, combine the first 10 ingredients
- 2 cups diced fresh pineapple
- 2 medium tomatoes, seeded and chopped
- 3/4 cup chopped sweet onion
- 1/4 cup minced fresh cilantro
- 1 jalapeno pepper, seeded and chopped
- 1 tablespoon olive oil
- 1 teaspoon ground coriander
- 3/4 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon minced garlic
- Tortilla chips
