Sweet Tea Icebox Tart

Preheat oven to 350 F. In a medium sized bowl, add the tea and the sweetened condensed milk and whisk together
- Filling:
- 1/4 cup unsweetened tea
- 1 (14 oz.) can sweetened condensed milk
- 1/2 cup heavy cream
- 1/2 cup key lime juice (I used Nellie & Joe’s Key West Lime Juice)
- 2 large eggs, lightly beaten
- 2 tablespoons sugar
- Gingersnap Crust
- 1 1/2 cups crushed gingersnap cookies
- 5 Tbsp. butter, melted
- 2 Tbsp. light brown sugar
- Whipped Cream-to garnish
- 1 cup whipped cream
- 3 Tbsp. sugar
Cherry Truffle Squares

Heat oven to 350°F. Cut cookie dough in half crosswise
- Crust and Filling
- 1 roll (16.5 oz) Pillsbury® refrigerated sugar cookies
- 1/3 cup semisweet chocolate chips
- 1/4 cup butter or margarine
- 1/4 cup unsweetened baking cocoa
- 3 tablespoons light corn syrup
- 1 tablespoon milk
- 2 cups powdered sugar
- 1 jar (10 oz) maraschino cherries, drained, chopped (about 30 cherries)
- Topping
- 1 cup white vanilla baking chips
- 2 tablespoons shortening
- Garnish, if desired
- Chocolate shavings or curls
Bailey's Mint Chocolate Truffles

Place chocolate and heavy cream in a heat-proof bowl over (not on) simmering water
- 11 oz dark chocolate (65% cacao)
- 8 tablespoon heavy cream
- 1/3 cup Baileys® with a Hint of Mint Chocolate
- 1/3 cup unsweetened cocoa powder, Dutch process
Summer Strawberry Coconut Cake

Preheat the oven to 350 degrees F
- 1 (18.5 ounce) box white cake mix
- 4 T. strawberry gelatin powder
- 2 T. all-purpose flour
- 1 t. baking powder
- 2 T. granulated sugar
- 3/4 cup vegetable oil
- 4 eggs
- 1/4 c. water
- 1/2 c. pureed strawberries
- 1 t. vanilla
- 1/2 t. coconut extract
- 1/2 cup fresh strawberries, finely diced
- 1 c. coconut, finely shredded in food processor
- several strawberries to fill cake and garnish
Crockpot Honey and Parmesan Pork Roast

- 1 (2-3 pound) boneless pork roast
- 2/3 cup Parmesan cheese, grated
- 1/2 cup honey
- 3 tablespoons soy sauce
- 2 tablespoons dried basil
- 2 tablespoons garlic, minced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 2 tablespoons cornstarch
- 1/4 cup cold water

- 1 pound hot sausage, uncooked
- 8 ounces cream cheese, softened
- 1 1/4 cups Bisquick

- 4 slices bacon, chopped
- 2 jalapeños, sliced
- 1 shallot, sliced
- 1/4 cup semolina or yellow cornmeal

- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 3 medium carrots, sliced
- 2 medium potatoes, peeled and cubed
- 1 medium onion, chopped
- 1/2 cup chopped celery
- 4 teaspoons beef bouillon granules
- 1-1/2 teaspoons salt
- 1/4 teaspoon pepper
- 1/4 teaspoon dried oregano
