Lemon Raspberry Cake

Preheat the oven 350°F. Butter and line a loaf pan with parchment paper
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon kosher salt
- 1 cup low-fat buttermilk
- 1 1/4 cups sugar
- 3 large eggs
- 2 teaspoons grated lemon zest (from 1 large lemon)
- 1/2 teaspoon vanilla extract
- 1/2 cup vegetable oil
- juice of 1 large lemon
- 1 cup fresh or frozen raspberries
- 2 tablespoons framboise liqueur* (raspberry liqueur)
- 2 tablespoons sugar
- 1/3 cup sugar (for sauce)
Lasagna Timpano

- 1 1/2 boxes lasagna noodles
- 1 c alfredo sauce
- 1 c pesto
- 2 c marinara sauce
- 3-4 c cheese (Parmesan, Mozzarella, Ricotta, Provolone)
- pepperoni, sausage, salami, ground beef, etc (opt)
Pina Colada Cheesecake

1. Heat oven to 325°F. Wrap outside bottom and side of 10-inch springform pan with foil to prevent leaking
- Crust:
- 1 3/4 cups graham cracker crumbs
- 6 tablespoons butter or margarine, melted
- Filling:
- 3 packages (8 oz each) cream cheese, softened
- 1/4 cup sugar
- 3 eggs
- 3/4 cup cream of coconut
- 1/4 cup light rum
- 2 teaspoons grated orange peel
- 1 can (8 oz) crushed pineapple in juice, drained, juice reserved
- Glaze:
- Reserved 1/2 cup pineapple juice
- 2 teaspoons cornstarch
- 1/4 cup sugar
- Garnish:
- 1 can (8 oz) crushed pineapple in juice, drained
- 1 jar (24 oz) refrigerated sliced mango, drained, chopped
- Fresh mint leaves, if desired
Baked Zucchini Sticks and Sweet Onion Dip

1) To make the dip: Melt the butter in a medium frying pan over moderate heat, and add the sliced onions
- Dip
- 1 tablespoon butter
- 1 medium sweet onion, about 1/2 pound, peeled and sliced
- 1 ounce cider vinegar
- 1 1/2 ounces honey
- 1 tablespoon prepared mustard
- 8 ounces mayonnaise
- salt and pepper to taste
- Zucchini sticks
- 1 1/4 to 1 1/2 pounds (3 medium) zucchini, unpeeled, cut into 3"-long stick
- 1 tablespoon salt
- 1 3/4 ounces Panko bread crumbs
- 1 3/4 ounces freshly grated Parmesan cheese
- 1 tablespoon Pizza Seasoning or mixed Italian herbs
- olive oil spray
- 4 ounces egg substitute; or 2 large eggs; or 3 egg whites, lightly beaten
Butterscotch Pecan Biscuits

Drop 2 tsp butter in each cup of a muffin pan and put into oven as it preheats to 425o
- 1 stick butter, sliced into 2 tsp (2/3 tbsp) bits
- 2 cups flour (248g)
- 1 tbsp baking powder
- 1 tsp salt
- 1/3 c cold chopped butter (5 1/3 tbsp)
- 3/4 c milk
- 1/2 c packed brown sugar (50g)
- 36 whole pecan halves (1 c)
Strawberry Mascarpone Stuffed French Toast

To make filling: 1
- For Filling:
- 1 cup strawberries (about 6 medium)
- 3 tbsp granulated sugar, divided
- 1/2 cup (4 ounces) mascarpone, room temperature
- 1/2 tsp pure vanilla extract
- 1/2 tsp finely grated orange zest
- For French Toast:
- 4 1″ thick slices egg bread (like brioche or challah) – about 1/2 an average loaf.
- 4 large eggs
- 1/2 cup cream (10% or 35% m.f.)
- 2 tablespoons granulated sugar
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon Grand Marnier or Cointreau (optional, but delicious!)
- 2 tablespoons butter
- Confectioner’s sugar and maple syrup for serving
Sun Dried Tomato Dip

In a large bowl, combine the cream cheese, mayonnaise, onion and garlic until blended
- 2 packages (8 ounces each) cream cheese, softened
- 2 cups mayonnaise
- 1/4 cup finely chopped onion
- 4 garlic cloves, minced
- 1 jar (7 ounces) oil-packed sun-dried tomatoes, drained and chopped
- 2/3 cup chopped roasted sweet red peppers
- 2 cups (8 ounces) shredded part-skim mozzarella cheese
- 2 cups (8 ounces) shredded Italian cheese blend
- 1 cup shredded Parmesan cheese, divided
- Assorted crackers
Mint Chip Cookietini

Place the milk, cookie dough vodka, chocolate vodka, and creme de menthe in shaker over ice
- 1/3 cup milk (or cream, half-and-half, melted vanilla ice cream, or your favorite dairy substitute)
- 2 Tablespoons Pinnacle Cookie Dough Vodka
- 2 Tablespoons Pinnacle Chocolate Vodka (or Chocolate Whipped Vodka)
- 2 Tablespoons Creme De Menthe Liqueur
- Garnish: (optional)
- Chocolate syrup (or hot fudge or melted chocolate)
- Chocolate shavings (or mini chocolate chips or chocolate cookie crumbs)
- Whipped Cream (regular or chocolate)

- 2 cups all-purpose flour
- 3/4 cup grated Parmesan cheese
- 2 teaspoons sugar
- 2 teaspoons Italian seasoning
- 2 teaspoons dried basil, parsley or cilantro flakes
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 1-1/4 cups buttermilk
- 1/4 cup canola oil
Hot-Spiced Pork and Rice

- 2 - 2 1/4 pounds boneless pork shoulder roast
- 2 - 3 tablespoons vegetable oil
- 4 medium carrots, thinly sliced (2 cups)
- 1 medium yellow sweet pepper, cut into thin strips (1 cup)
- 1 8 ounce can sliced water chestnuts, drained
- 1 large onion, chopped (1 cup)
- 1 cup uncooked long grain white rice
- 1 14 ounce can reduced-sodium chicken broth
- 1/2 cup water
- 1/4 cup soy sauce
- 2 tablespoons molasses
- 2 tablespoons light-color corn syrup
- 1 - 2 teaspoons red chili paste
- 1 teaspoon five-spice powder
- 1/3 cup sliced green onions
