Raspberry Oatmeal Smoothie

This raspberry oatmeal smoothie is a great way to get a balanced breakfast that keeps you going
- 1 cup ice
- 1/2 cup frozen raspberries
- 1/2 cup plain lowfat yogurt
- 1 banana
- 1/2 cup old-fashioned rolled oats
- 1 tablespoon honey
- 1 cup coconut water (or other liquid, such as juice)
Grilled Cabbage

1 Cut cabbage into four wedges
- 1 head cabbage
- 4 teaspoons butter
- 4 slices bacon
- Spice mix
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
- 2 tablespoons grated Parmesan cheese
Pecan Pie Truffles

1. In a medium bowl, stir together pecans, graham cracker crumbs, brown sugar and salt until well combined
- 2 1/2 cups pecans, toasted and finely chopped
- 1 cup graham cracker crumbs
- 1 cup dark brown sugar, packed
- 1/2 teaspoon salt
- 2 tablespoons maple syrup
- 1/4 cup bourbon
- 1 teaspoon vanilla
- 7 ounces dark chocolate
Portabella Pizza Bites

Preheat oven to 400 degrees
- 6 mini Portabella mushrooms (or 2 large Portabella mushroom caps)
- 1/2 cup marinara sauce (if all you have is a tomato, you can try my Xed Pizza Sauce)
- 1/2 oz. turkey pepperoni (approx. 6 slices)
- 2 oz. black olives
- 3 oz. low-fat Mozzarella cheese
- 1 egg white
Smoked Ham, Leek and Gruyere Quiche

Heat oven to 425°F
- 1 refrigerated rolled pie crust
- 2 teaspoon(s) olive oil
- 2 medium leeks (white and light green parts only), chopped
- Kosher salt and pepper
- 2 teaspoon(s) fresh thyme
- 4 large eggs
- 3/4 cup(s) sour cream
- 1/2 cup(s) whole milk
- 1 tablespoon(s) Dijon mustard
- 1/4 teaspoon(s) freshly grated nutmeg (optional)
- 4 ounce(s) Gruyère or Swiss cheese, grated (1 cup)
- 4 ounce(s) thinly sliced smoked deli ham
Peaches 'n Cream Cake

Heat oven to 350°F (or 325°F for dark or nonstick pan)
- Cake
- 1 box Betty Crocker® SuperMoist® yellow cake mix
- 1/4 cup Gold Medal® all-purpose flour
- 1 cup Yoplait® Original 99% Fat Free creamy harvest peach yogurt (from 2-lb container)
- 1/2 cup water
- 1/4 cup vegetable oil
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 3 eggs
- Topping
- 1 1/2 cups frozen (thawed) reduced-fat whipped topping
- 1 cup Yoplait® Original 99% Fat Free creamy harvest peach yogurt (from 32-oz container)
- 2 cups frozen sliced peaches (from 16-oz bag), thawed, drained
Summer Pineapple Strawberry Cooler

In a large pitcher combine pineapple juice concentrate, limeade, and water
- 1 12-ounce can frozen pineapple juice concentrate, thawed
- 1 6-ounce can frozen limeade concentrate, thawed
- 4 cups cold water * 1 liter club soda, chilled
- Ice cubes
- Fresh strawberries (optional)
- Short (6-inch) wooden skewers
- Assorted fruits such as halved orange slices, halved lime slices, orange sections, raspberries, strawberries, sliced kiwifruit, and mint sprigs
Andes Mint Pillow Cookies

Preheat oven to 400° F. In a large mixing bowl, combine sugar, butter, egg and vanilla
- 1 cup unsalted butter - softened
- 1 cup sugar
- 1 large egg
- 1 tsp vanilla
- 3 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 49 Andes Créme de Menthe Thins (Can also be made with Andes Cherry Jubilee or Andes Toffee Crunch Thins)
Candy Cane Cocktail

Add all liquid ingredients to cocktail shaker filled with ice
- 1 shot vanilla rum
- 1 shot white chocolate liqueur (recommended: Godiva)
- 1 shot peppermint schnapps
- Candy cane, garnish
Better Than Crack Brownies

Mix brownies according to directions, and bake for 20-25 minutes in a 9 x 13 baking dish
- 1 batch brownies (boxed mix)
- 1/2 cup salted peanuts (if don’t have salted, add sea salt)
- 1 cup chopped Reese’s peanut butter cups
- 1 1/2 cup milk chocolate chips
- 1 1/2 cup creamy peanut butter
- 1/2 tablespoon butter
- 1 1/2 cups Rice Krispies Cereal
