Smoked Gouda Enchiladas

Preparation Instructions Lightly spray the bottom of a 9×13 baking dish and set aside
- 2 Tablespoons Olive Oil
- 1 whole Onion, Diced Small
- 2 cloves Garlic, Minced
- 1/2 cups Flour
- 1 teaspoon Cumin
- 2 teaspoons Chili Powder
- 1 can (4 Ounce Can) Diced Green Chiles (mild Or Hot)
- 1 Tablespoon Minced Chipotle Peppers In Adobo Sauce
- 4 cups Low Sodium Chicken Broth
- 1 Tablespoon Adobo Sauce
- 1 teaspoon Kosher Salt
- 1/2 teaspoons Black Pepper
- 2 whole Grilled Chicken Breast, Shredded
- 2 cups Smoked Gouda Cheese, Shredded
- 1 cup Sharp Cheddar Cheese, Shredded
- 8 whole Taco-sized Flour Tortillas(I Used Whole Wheat)
- Sour Cream, Hot Sauce, Sliced Avocado, For Serving
Snickerdoodle Muffins

Preheat the oven to 350ºF
- For the Topping:
- 2 1/4 cups flour
- 3/4 teaspoon baking powder
- 3/4 teaspoon baking soda
- 3/4 teaspoon cream of tartar
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 2 sticks (16 tablespoons) unsalted butter, softened
- 1 cup sugar
- 2 large eggs
- 2 teaspoons vanilla
- 1 cup sour cream
- 1/4 cup buttermilk
- 2/3 cup sugar
- 2 tablespoons cinnamon
Espresso Fudge

1. Crush the biscuits—I used the end of a rolling pin and crushed them in a bowl
- 2 250g packs plain wine biscuits
- 1 tin (395g) sweetened condensed milk
- 180 g butter
- 2 shots espresso*
- 70g bag chopped walnuts
- Icing
- 400 g cream cheese (full fat)
- 1 1/2 cups icing sugar
- 2 shots espresso*
- 70g bag chopped walnuts
Crockpot Chicken Noodle Soup

Place the first 4 ingredients in a 3 1/2-5 quart crock pot
- 1 chicken whole, cut up, skinless
- 2 medium carrots, peeled and chopped
- 1/2 cup onion, peeled and chopped
- 2 celery ribs, coarsely chopped
- 2 1/2 tsp salt
- 2 tsp parsley
- 3/4 tsp marjoram
- 1/2 teaspoon basil
- 1/4 tsp poultry seasoning
- 1/4 tsp black pepper
- 1 bay leaf
- 2 quarts water
- 2 1/2 cups egg noodles
Green Beans In Creamy Mushroom Sauce

Soak the dried porcini mushrooms in the water for 20 minutes
- 1 ounce dried porcini mushrooms
- 1/2 cup boiling water
- 2 tablespoons butter
- 1 small onion, diced
- 8 ounces cremini mushrooms, sliced
- 2 cloves garlic, chopped
- 1 teaspoon thyme, chopped
- 1/2 cup heavy cream
- 1/2 cup parmigiano reggiano, grated
- salt and pepper to taste
- 1 handful parsley, chopped
- 1 pound green beans
Semi-Homemade Ramen Bowl

1. Cook 3-4 gyoza according to package directions
- 1 packet of Japanese Ramen
- 1 packet of frozen gyoza (only need 3 or 4 from the packet)
- 1 leaf of napa or Chinese cabbage, chopped
- 1 handful of soy or mung bean sprouts
- 1 handful frozen peas
- 1 egg (you may also prefer it boiled instead of my poaching method)
- 1 green onion, chopped
- Other possible garnishes: edamame, shelled; sliced white onion; sliced ham or turkey; nori strips
Sopapilla Cheesecake

Unroll and spread 1 can crescent rolls on bottom of un-greased pan
- 2 cans Pillsbury butter crescent rolls
- 2 (8oz) packages cream cheese (softened)
- 1 cup sugar
- 1 teaspoon vanilla
- 1/4 cup butter (melted)
- Cinnamon & sugar
Parmesan Crusted Pesto Grilled Cheese Sandwich

1. Heat a non-stick pan over medium heat
- 2 slices ciabatta or French bread
- 1 tablespoon soft butter, for brushing the bread
- 2 slices mozzarella cheese
- 2 tablespoons basil pesto
- 1/3 cup finely shredded Parmesan cheese (I use my Microplane)
Hot Corn Dip

Preheat oven to 350 degrees
- 4 tablespoons butter, divided
- 3 medium ears of corn, shucked, corn cut from cob
- 1 medium yellow onion, chopped
- 2 garlic cloves, minced
- 1 small jalapeno, seeds and ribs removed, finely chopped
- 1/2 medium green pepper, chopped
- 1 cup sour cream
- 3/4 cup mayonnaise
- 10 ounces Monterey Jack/Cheddar Cheese blend, divided
- 1/2 teaspoon cumin
- 1/4 teaspoon Chipotle Chile Powder
- 1 small tomato, chopped
- 1/4 cup cilantro, chopped
- 1 green onion, white and green parts, chopped
- black olives
- Corn chips, for dipping
Honey Cheesecake Bars

In a small bowl, combine flour and brown sugar; cut in butter until mixture is crumbly

- 1/2 cup all-purpose flour
- 3 tablespoons brown sugar
