Coconut Crunch Cookie-Candy

Preheat oven to 350 degrees
- 1 cup shredded sweetened coconut
- 1/2 cup all-purpose flour
- 2 tablespoons sweet rice flour
- 1/4 teaspoon baking powder
- 1/2 cup butter, cold, cut into small cubes
- 1/2 teaspoon kosher salt
- 1/2 cup confectioners’ sugar
- 1/3 cup light brown sugar
- 1 tablespoon water
- 1 teaspoon vanilla
- 1/2 cup chopped pecans
- 1 cup semi-sweet chocolate chips (or bittersweet, white, vanilla, cherry, etc.)
Gluhwein Cupcakes

- Heat the wine with spices, cook for 10 minutes and let cool
- 200 ml. Glühwein (spiced sweet wine).
- 100 g. dark chocolate.
- 250 g. butter.
- 200 g. sugar.
- A pinch of salt.
- 5 eggs.
- 250 g. all-purpose flour.
- One tablespoon of baking powder.
- 1 teaspoon cocoa.
- 1 teaspoon cinnamon.
Summer Strawberry Salad

Make a dressing by whisking together the mayonnaise, sugar, and vinegar in a small bowl
- 1 cup mayonnaise
- 1/4 cup white sugar
- 1 tablespoon white vinegar
- 1 tablespoon poppy seeds
- 1 head iceberg lettuce, torn into bite-size pieces
- 1 bunch fresh spinach, washed, stems removed
- 1/2 cup diced red onion

Giant Bavarian Pretzels

Preheat the oven to 400 degrees
- 1 1/2 cups lukewarm water
- 1 package active dry yeast (2 1/4 teaspoons)
- 4 1/2 cups flour
- 2 tablespoons light brown sugar
- 2 teaspoons table salt

- 4 tablespoons unsalted butter, melted

Slow Cooker Carnitas

- 5 pounds pork shoulder
- 5 cloves garlic
- 1 tablespoon salt
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon black pepper

- 1/4 teaspoon cinnamon
- 1/2 teaspoon cayenne pepper
- 1 tablespoon chipotle hot sauce (optional)
- 2 limes, juiced
- 1/2 cup orange juice
- 12 ounces beer
- 1/2 cup salsa (I like to use a less chunky one)
Watermelon Mint Popsicles

- 1 1/2 pounds seedless watermelon, rind removed, cut into 1-inch pieces, about 4 cups
- 2 tablespoons sugar
- 1/4 cup mint leaves, minced
- 2 teaspoons lemon zest, finely grated
- 1 pinch salt
Coconut Blue Hawaiian

Chill martini glasses in freezer several hours before serving
- 1 cup pineapple juice
- 1/2 cup (4 ounces) light rum, if desired
- 1/2 cup (4 ounces) blue curaçao
- 1/2 cup (4 ounces) cream of coconut (not coconut milk)
- 10 to 12 ice cubes
- Fresh cherries or maraschino cherries with stems, if desired
Banana Mango Muffins

- 1 large ripe mango, peeled and roughly chopped
- 1/2 cup chopped dried mango
- 1 ripe banana, mashed
- 2 1/2 cups flour
- 1/2 cup sugar
- 3/4 tsp salt
- 1 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 cup unsweetened dried coconut
- 2 eggs
- 1/4 cup canola oil
- additional sugar for sprinkling
Chicken Tortilla Soup

Place chicken in Crock-Pot® slow cooker
- 4 boneless, skinless chicken thighs
- 1 4-ounce can chopped green chilies, drained (hot or mild, depending on preference)
- 2 cloves of garlic, minced
- 1 yellow onion, diced
- 2 15-ounce cans of diced tomatoes, including juice
- 1/2 - 1 cup chicken broth
- 1 teaspoon cumin
- Kosher salt and pepper
- 4 corn tortillas, sliced into 1/4 inch strips
- 2 tablespoons chopped cilantro
- 1/2 cup shredded Monterey jack cheese
- 1 avocado diced and tossed with lime juice to prevent browning
- 1 lime, cut into wedges
