Healthy Banana Muffins

So one of the staples to my breakfast diet are these delicious banana muffins
- 2 1/2 cups of old-fashioned oatmeal
- 2 bananas
- 2 eggs (I’m going to try a batch with egg whites soon, I’ll let you know how they turn out! That would cut down on the calories even more!)
- 1 cup of vanilla flavored fat free yogurt
- 1/2 cup of sugar
- 1.5 tsp baking powder
- 1/2 tsp baking soda
Chicken and Guacamole Tostadas

- 1 ripe peeled avocado
- 1 cup plus 2 tablespoons finely chopped tomato, divided
- 3 tablespoons minced fresh onion, divided
- 3 tablespoons fresh lime juice, divided
- 1/2 teaspoon salt, divided
- 1 small garlic clove, minced
- 1 tablespoon chopped fresh cilantro
- 1 tablespoon minced seeded jalapeño pepper
- 2 cups shredded skinless, boneless rotisserie chicken breast
- 1/4 teaspoon smoked paprika
- 8 (6-inch) corn tostada shells
Bloomin' Baked Apples

1.Preheat the oven to 375 degrees
- 2 Honeycrisp apples (or other crisp apples)
- 2 tbsp butter
- 3 tbsp brown sugar, packed
- 1 tbsp flour
- 1 tsp cinnamon
- 4 caramels, unwrapped
- Optional toppings: vanilla ice cream, caramel sauce and cinnamon
Fried Asparagus

Roll asparagus in flour. Then dredge in eggs, milk, salt, pepper and thyme mixture
- 1-2 bunches of fresh asparagus

Caramel Brownies

Preheat the oven to 350˚ F
- For the brownies:
- 1 cup (2 sticks) butter
- 12 ounces bittersweet or semisweet chocolate, coarsely chopped
- 1 1/2 cups sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1 1/2 cups pecans, coarsely chopped (optional)
- 1 cup semisweet chocolate chips
- For the caramel filling:
- 14 ounces caramel candies, unwrapped
- 1/4 cup heavy cream
- Note: I found that an hour or so of chilling the brownies after they had cooled completely helped the caramel layer set up and become more pronounced.
Pepperoni Pizza Puffs

- 3/4 cup flour
- 3/4 teaspoon baking powder
- 3/4 cup skim milk
- 1 egg, lightly beaten
- 4 ounces low fat mozzarella cheese, shredded (about 1 cup)
- 4 ounces turkey pepperoni, cut into small cubes (about 1 cup)
- 1/2 cup Hunts Garlic and Herb Past Sauce
WHITE CHOCOLATE CRANBERRY SHORTBREAD

- 1 cup unsalted butter, room temperature
- 1/2 cup powder sugar plus 2 tbsp powder sugar
- 1/4 cup cornstarch
- 1 1/2 cups all purpose flour
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1 cup chopped dried cranberries
- 1/2 cup white chocolate chips
Hot Shrimp and Artichoke Dip

- 6 oz. Pre-cooked Shrimp (The size I used was 61-70)
- 1 -14oz. Can Quartered Artichoke Hearts
- 6 Green Onions - Chopped
- 1 Cup Sharp Cheddar Cheese - Shredded
- 1 1/4 Cup Parmesan Cheese - Shredded
- 1/2 Cup Mayonnaise
- 1/2 Cup Sour Cream
- 2 Tbs Butter
- 1 Tbs. Minced Garlic
- 1 tsp. Red Pepper Flakes
- 1 tsp. Garlic Powder
