Artichoke-Spinach Dip - Whole Living Eat Well

Preheat oven to 350 degrees
- 5 artichokes, tough outer leaves removed, stems and tops of leaves trimmed

In a Dutch oven, saute onion in oil until tender
- 1 large onion, chopped
- 1 tablespoon canola oil
- 4 garlic cloves, minced
- 4 cups reduced-sodium chicken broth
- 2 cans (15 ounces each) pinto beans, rinsed and drained
- 2 cans (14-1/2 ounces each) fire-roasted diced tomatoes, undrained
- 3 cups frozen corn
- 2 chipotle peppers in adobo sauce, seeded and minced
- 2 teaspoons adobo sauce
- 1 teaspoon ground cumin
- 1/4 teaspoon pepper
- 2 cups cubed cooked chicken breast
- 1/2 cup fat-free sour cream
- 1/4 cup minced fresh cilantro

- 3/4 tsp table salt, or to taste
- 1/2 tsp black pepper, freshly ground, or to taste
- 12 oz uncooked boneless, skinless chicken breast, cut into 2-in chunks
- 1 1/2 tsp olive oil, divided
- 1 medium uncooked onion, chopped
- 1 large uncooked zucchini, halved lengthwise, sliced into 1/2-in thick slices
- 1 cup frozen corn kernels
- 1 Tbsp minced garlic
- 14.5 oz canned diced tomatoes, in sauce, salt-free
- 1/3 cup cilantro, fresh, chopped
Pumpkin Muffins

Bake at 350 degrees for 20-25 minutes
- There's only two ingredients. That's right, just the cake mix and the pumpkin (15 oz.). No oil, no eggs, no water, nothing else. The end result is an amazing, incredibly moist muffin/cupcake with a hint of pumpkin flavor.
- It felt kind of strange not to add any liquids to the mix but it came together nicely into a thick batter.
