- 1 tsp olive oil
- 1 medium leek(s), finely chopped (white part only)
- 1 clove(s) (medium) garlic clove(s), minced
- 1/2 tsp dried oregano
- 28 oz canned diced tomatoes
- 6 oz fat-free evaporated milk
- 2 Tbsp basil, fresh, finely chopped
- 1/8 tsp table salt, or more to taste
- 1/8 tsp black pepper, freshly ground, or to taste

- Optional garnish:
- 1 cup tomato juice
- 1 cup IPA beer
- 1/2 tsp celery salt (plus additional for glass rims)
- 1/2 tsp sriracha
- 1/2 tsp Worcestershire sauce
- 2 tsp brine for a jar of spanish olive
- 1/4 tsp cream style horseradish
- 1 tbs lime juice (about 1 medium lime)

Strawberry Lemonade Spritzer

Mix ingredients together in a chilled glass
- 4 oz Champagne, or sparkling cider/water
- juice of 1 lemon
- 1/4 cup strawberries, thinly sliced
- 1 tsp. stevia
Pita Pizza - Whole Living Eat Well

Directions Preheat oven to 350 degrees
- For the Garnish
- Fresh Basil, thinly sliced
- For the Pizza
- 4 whole-wheat pita breads (each 7 1/2 inches)
- 1 yellow bell pepper, seeds and membranes removed, cut into 1/8-inch-thick strips
- 3 ounces mozzarella cheese, grated
- For the Tomato Sauce
- 1/4 teaspoon olive oil
- 1 small yellow onion, peeled and chopped into 1/4-inch dice
- 2 cloves garlic, peeled and minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon crushed red-pepper flakes
- 1 bay leaf
- One half 28-ounce can whole peeled tomatoes, roughly chopped
- 1/4 cup tomato paste
Lemon Berry Trifle

GREAT FOR COOKOUT SWEETS!
- Berries (can be cooked up to a day in advance and refrigerated):
- Note: the trifle should be assembled about 5-8 hours before serving so all the flavors can blend together. All of the components can be made from 1-3 days ahead. Look through the recipe for more specific details.
- 4 cups berries (a combination of blueberries, strawberries and raspberries), you can use fresh or frozen – if using frozen, they need to be thawed and drained
- 1 lemon, juiced
- 1/4 cup sugar
- 2 teaspoons cornstarch
- Lemon Cream (the lemon curd can be made up to 3 days in advance):
- 3 cups whipping cream
- 1/3 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1 recipe lemon curd (see below) or an 11-ounce jar lemon curd
- Pound Cake (can be made a day in advance or longer, if it is frozen):
- 1 9-inch round or loaf lemon (or plain) pound cake, homemade (Danielle used this recipe, I wanted to try a new version and typed it up below – both are fantastic) or store-bought, cut into 1/2-inch thick slices
Sloppy Joes

This is a nice, basic sloppy joe recipe
- 1 onion, finely chopped
- 2 pounds lean ground beef
- 15 oz can no salt added tomato sauce
- 1/2 cup water
- 1 T lemon juice
- 2 t Worcestershire sauce
- 1 t salt
- 1 t vinegar
- 1/2 t dry mustard
Roasted Sirloin Beef

Caramelized Honey Dijon Chicken

- 1/4 cup honey
- 1/4 cup dijon mustard
