Classic Chicken Noodle Soup

- For Chicken and Broth:
- 3-4 pound whole chicken, neck and giblets removed
- 6 cups low-sodium chicken broth
- 2 bay leaves
- 1 teaspoon salt
- 1 teaspoon pepper
- 3 stalks celery, chopped in large chunks
- 3-4 carrots, cut in large chunks
- 1 onion, chopped in large pieces
- Soup:
- 12 cups low-sodium chicken broth
- 4 stalks celery, chopped
- 1 pound carrots, chopped
- 1-2 teaspoons salt (to taste, depending on the broth)
- 1/2 teaspoon pepper
- 16-20 ounces egg noodles
- 1 cup cream or half-and-half combined with 1 tablespoon cornstarch (optional for creamy-style)

- One loaf of any bread you want. I used Grandma Sycamore's white bread
- 1 Cube of Butter
- 1/3 Cup Granulated Sugar for Cream Cheese
- 1/3 Cup Granulated Sugar for coating
- 1 teaspoon of Cinnamon
- 1 T. Powdered Sugar
- 1 - 8 oz. cube of Cream Cheese
Peppermint Brownie Trifle!

Servings: 16 Calories: 125 calories per serving Weight Watchers Points Plus Value: 4 per serving
- 1 box brownie mix (I used Sugar Free Pillsbury brand)
- 1/3 cup Low Fat Plain Yogurt, (I used Plain Chobani Greek Yogurt to replace the oil that the brownie mix calls for. Note: The amount of yogurt will vary based on how much oil is called for on the brownie box)
- 1 egg (may vary based on brand of brownies, use what is called for on the box)
- 1 small box sugar free instant white chocolate pudding mix
- 1 small box sugar free instant chocolate pudding mix
- 1 (16 oz) tub fat free or light Cool Whip (or 2 small containers of TruWhip if you prefer a natural version)
- 2 cups skim milk (or milk alternative)
- 3/4 tsp peppermint extract
- Optional toppings: Additional Cool Whip for topping, 2 candy canes, crushed , or 2 squares peppermint bark, roughly chopped.

Preheat the oven to 350ºF and line a 9x13-inch pan with foil, leaving enough for a 2-inch overhang on all sides
- For crust:
- 2 sticks unsalted butter, softened
- 2/3 cup packed brown sugar
- 2 2/3 cups all-purpose flour
- 1/2 teaspoon salt
- For topping:
- 1 stick (1/2 cup) unsalted butter
- 1 cup packed light brown sugar
- 1/3 cup honey
- 2 tablespoons heavy cream
- 2 cups chopped pecans
“Baked” Apple Crisp for Two!

DELICIOUS with ice cream or whipped topping, this dessert is always a welcome treat at our table
- 2 medium apples, peeled, cored and sliced
- 1 tablespoon light butter, whipped
- 1 tablespoon brown sugar
- 1 teaspoon stevia/splenda/or low cal sweetener of choice (or more depending on desired sweetness, and tartness of apples)
- 1/3 cup quick oats
- 1 teaspoon cinnamon
- 1/2 teaspoon all spice
