Fluffy Buttermilk Pancakes

Mix dry ingredients together in medium bowl
- 2 cups all purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups well shaken buttermilk (you may need a little more if you want a thinner batter)
- 2 large eggs
- 1/4 cup vegetable oil (or applesauce)
- 1 tsp. vanilla
- 1 tsp. butter flavoring
BBQ Chicken Salad

Combine the cooked chicken and BBQ sauce in a medium bowl
- 3 cups cooked, shredded chicken
- 2 cups BBQ sauce, storebought or homemade
- 1/2 head iceberg lettuce, cored and chopped
- 2 romaine hearts, chopped
- 1/2 red onion diced
- 1/4 cup chopped fresh cilantro
- 1 1/2 cups frozen corn, thawed
- 1 can (15 ounces) black beans, rinsed and drained
- 4 ounces sharp cheddar cheese, cubed small or shredded
- 4 ounces Monterey jack cheese, cubed small or shredded

- 1 lb. butter
- 2 qt. heavy cream
- 8 oz. milk
- 1 lb. Parmesan cheese
- 4 oz. fontina cheese

1. Get your onion and garlic peeled and chopped, your carrots peeled and grated and your celery chopped
- 1 medium onion, chopped
- 2 large carrots, peeled and grated
- 4 stalks celery, chopped

- 2-3 T olive oil
- 1 Rotisserie Chicken + 1 C reserved broth from the bottom of the chicken container
- 7 C water
- 8 chicken bullion cubes
- 1 (16 ounce) package Potato Gnocchi
- 4 C half and half
- 1 1/2 C spinach, chopped
- 1 t thyme
- 1 T sugar
- 1/4 C cold water
- 5 T cornstarch
