Corn and Chicken Chowder

In a large stock pot, fry the bacon pieces until crisp
- 6 ears of fresh corn, husked and silks removed (or 1-30 ounce can corn and 1-15 ounce can cream corn)
- 6 slices bacon, chopped
- 8 scallions
- 3 medium potatoes (I use Idaho potatoes)
- 2 tablespoons all-purpose flour
- 3 cups whole milk
- 2 cups chicken stock
- 2 teaspoons Old Bay seasoning
- 1 teaspoon dried parsley flakes
- 1/2 teaspoon dried thyme
- 1/4 teaspoon cayenne pepper
- 1 small can (4 ounces, I believe) chopped green chiles
- 2 cups roasted chicken, shredded (a Rotisserie chicken from the deli works great for this!)
- Salt and pepper, to taste
- handful of grated cheddar, for garnish
Hawaiian Chicken

Combine first 5 ingredients
- 1/4 cup pineapple juice
- 2 tablespoons ketchup
- 2 tablespoons lower-sodium soy sauce
- 1 1/2 teaspoons minced peeled ginger
- 2 garlic cloves, minced
- 4 (6-ounce) skinless, boneless chicken breast halves
- Cooking spray
- 3/4 teaspoon salt, divided
- 1/4 teaspoon black pepper
- 2 cups hot cooked long-grain white rice
- 1/4 cup chopped fresh cilantro
Low Fat Sloppy Joes

Heat oil in a large skillet over medium-high heat
- 1 tsp olive oil
- 2 cups chopped mushrooms
- 1 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/4 cup chopped celery
- 1/4 cup chopped carrot
- 2 cloves garlic, minced
- 6 ounces lean ground beef
- 6 ounces lean ground turkey breast
- 1/4 cup ketchup
- 1 TBSP red wine vinegar
- 1 TBSP worcestershire sauce
- 1 tsp dried oregano
- 1/4 tsp salt
- 1/4 tsp pepper
- 8 oz. no~salt added tomato sauce
- Six (1.5 oz) whole-wheat hamburger buns, toasted
Perfect Freezer Biscuits

In a food processor, add all of the dry ingredients and pulse a few times to get the ingredients mixed together
- 4 cups flour
- 2 Tbsp baking powder
- 1 1/2 tsp salt
- 1 tsp sugar
- 1/2 tsp soda
- 1/2 cup cold butter, cut into small pieces
- 1 (16 oz) container or 2 cups reduced fat sour cream
- 3-5 tsp water, if needed
- 4 Tbsp melted butter (need when baking the entire batch of biscuits)
Caramelized Onion Pot Roast

Spray 12" skillet with cooking spray; heat over medium-high heat
- 2-1/2 lb beef boneless chuck roast
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tbsp olive oil
- 4 medium onions, sliced thin
- 1 cup beef broth
- 1/2 cup beer or apple juice (we use apple juice)
- 1 tbsp packed brown sugar
- 1 tbsp cider vinegar
- 2 tbsp Dijon mustard
Better-Than-Almost-Anything Cake

The combination of rich ingredients produces a decadent, caramel-soaked cake that's sure to be a hit!
- 1 box Betty Crocker® SuperMoist® German chocolate cake mix
- Water, vegetable oil and eggs called for on cake mix box
- 1 can (14 oz) sweetened condensed milk
- 1 jar (16 to 17 oz) caramel, butterscotch or fudge topping
- 1 container (8 oz) frozen whipped topping, thawed
- 1 bag (8 oz) toffee chips or bits
Buffalo Chicken Spaghetti

Cook spaghetti according to package directions, drain
- 16 oz spaghetti
- 3 cups cooked, chopped chicken (I use a rotisserie)
- 2 cups chicken broth
- 8 oz cream cheese (can use light)
- 1/3 - 1/2 cup Frank's hot sauce (more or less to taste)
- 1/2 cup cheddar cheese
- 1 cup Ranch dressing

Chicken Parmesan Skillet Pot Pie

1. Preheat oven to 350 degrees F
- 28 ounce can crushed tomatoes
- 1/2 teaspoon Italian Seasoning
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 3 cups cooked, shredded chicken (I used a rotisserie)
- 1/4 cup shredded Parmesan cheese
- 3/4 cup shredded mozzarella cheese
- 1 refrigerated pie crust, room temperature
- 1 egg white
- 1/4 teaspoon Italian seasoning
- 1 tablespoon shredded Parmesan cheese
Meatball Sub Sandwich Casserole

Preheat oven to 350F degrees
- 1 loaf Italian bread, cut into 1-inch thick slices
- 1 (8 oz.) package cream cheese, softened
- 1/2 cup mayonnaise
- 1 tsp. Italian Seasoning
- 1/4 tsp. pepper
- 2 cups shredded mozzarella cheese, divided
- 1-lb. pkg. fully cooked frozen meatballs, thawed
- 1 (28 oz.) jar pasta sauce
- 1 cup water
Baked Buffalo Chicken Pasta

Preheat oven to 375 degrees F
- 1 pound pasta (I used whole wheat orecchiette)
- 3 boneless, skinless chicken breasts, cooked and cut into chunks
- 1 tablespoon butter
- 1 tablespoon flour
- 1 1/2 cups milk
- 4 ounces grated monterey jack cheese (I used half a brick) + more for topping
- 1/3 cup grated sharp cheddar cheese + more for topping
- 1/3 cup buffalo wing sauce
- 1/3 cup panko bread crumbs
- salt and pepper to taste
- for garnish: 3/4 cup chopped green onions, 1/2 cup fresh cilantro, 1/2 cup gorgonzola cheese, additional buffalo wing sauce
