Bistro Roast Chicken

Serve the roasted heads of garlic on the side
- 2 chicken leg quarters (about 1 1/2 pounds)
- 1 tablespoon chopped fresh or 1 teaspoon dried basil
- 1 tablespoon chopped fresh or 1 teaspoon dried thyme
- 1 tablespoon chopped fresh or 1 teaspoon dried rosemary, crushed
- 2 teaspoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 whole garlic heads
Mushroom Beef Barley Soup

Tie all but seven sprigs dill into a bundle, roughly chop remaining sprigs; set both aside
- 1 small bunch Fresh Dill
- 1/2 tsp Salt
- 3 Tbl Olive Oil
- 1 1/4 C hulled Barley
- 3 qt Beef Stock
- 1/2 lb Button Mushrooms, quartered
- 2 Parnips, peeled and chopped into 1/2" dice
- 1 lb boneless Beef Chuck, cut into 1/2" pieces
- 1/8 tsp Ground Pepper
- 1 medium Onion, peeled & chopped into 1/2" dice
- 1 12oz bottle Dark Beer
- 3 Carrots, peeled & chopped into 3/4" dice
- 1 tbl Fresh Thyme, roughly chopped
