Vegetable Frittata

Position a rack in the upper third of the oven and preheat to 450 degrees F
- 3 large eggs, plus 3 egg whites
- 3/4 cup 2% reduced-fat cottage cheese
- 4 ounces smoked gouda cheese, shredded (about 1 cup)
- 1 teaspoon minced fresh rosemary
- 3 cloves garlic, thinly sliced
- 2 tablespoons extra-virgin olive oil
- 1 medium onion, chopped Kosher salt
- 1 16-ounce package frozen mixed vegetables (broccoli, cauliflower and carrots), thawed
- 2 tablespoons grated parmesan cheese
- 1 scant teaspoon paprika
- 4 slices multigrain bread

- 2 teaspoons instant coffee granules
- 1/3 cup boiling water
- 1/4 cup quick-cooking oats
- 3 tablespoons butter, softened
- 1/4 cup sugar
- 3 tablespoons brown sugar
- 1 egg yolk
- 1/2 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1 tablespoon baking cocoa

Grandma Van Duren's Chocolate Crinkle Cookies

- 2 tsp Vanilla
- 2 1oz Unsweetened Chocolate Squares, melted
- 2 tsp Baking Powder
- 1/3 C Milk
- 1 2/3 C Sugar
- 2 Eggs
- 2 C Sifted Flour
- 1/2 tsp Salt
- 1/2 C Chopped Nuts (optional)
