Potatoes- Mixed Roasted Potatoes With Herb Butter

Cut the potatoes into 2-inch cubes
- 1 1/2 pounds russet potatoes
- 1 1/2 pounds red-skinned potatoes
- 2 pounds sweet potatoes
- Kosher salt
- 1 tablespoon canola oil
- 4 tablespoons unsalted butter, at room temperature
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh thyme
- 1/2 tablespoon chopped fresh rosemary
- Freshly ground pepper
Asparagus, Ham, and Lemon

- 2 tablespoons olive oil
- 2 ounces thinly sliced prosciutto ham, or any ham, roughly chopped or torn
- 1 pound fresh asparagus
- 1/4 cup water
- 1 clove garlic, thinly sliced
- salt and ground black pepper to taste
- 1 juice of 1/2 a lemon

- Big bowl of popcorn (I air popped mine using no butter)
- Bag of white chocolate chips

Beef Stew with Carrots and Potatoes

1. Preheat oven to 325 and move rack to middle position
- 3 pounds boneless beef chuck (well-marbled), cut into 1-1/2-inch pieces
- 2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 3 tablespoons olive oil
- 2 medium yellow onions, cut into 1-inch chunks
- 7 cloves garlic, peeled and smashed
- 2 tablespoons balsamic vinegar
- 1-1/2 tablespoons tomato paste
- 1/4 cup all-purpose flour
- 2 cups dry red wine
- 2 cups beef broth (I like the Pacific organic brand)
- 2 cups water
- 1 bay leaf
- 1/2 teaspoon dried thyme
- 1-1/2 teaspoons sugar
- 4 large carrots, peeled and cut into one-inch chunks on a diagonal
- 1 pound small white boiling potatoes (baby yukons), cut in half
- Fresh chopped parsley, for garnish (optional)
Sweet Potatoes- Candied

Preheat oven to 400 degrees F (200 degrees C)
- 4 pounds sweet potatoes, quartered
- 1/2 c salted butter
- 3/4 c brown sugar
- 4 cups miniature marshmallows, divided
- 2 Tbsp cinnamon
- 1/2- 1 Tbsp nutmeg
- 1/2 tsp vanilla
Angel Icing

VERY sticky when this cools down
- 2 egg whites
- 3/4 cup white sugar
- 1/3 cup corn syrup
- 2 tablespoons water
- 1/4 teaspoon cream of tartar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Best Bread Machine Bread

Place the water, sugar and yeast in the pan of the bread machine
- 1 cup warm water (110 degrees F/45 degrees C)
- 2 tablespoons white sugar
- 1 (.25 ounce) package bread machine yeast
- 1/4 cup vegetable oil
- 3 cups bread flour
- 1 1/2 teaspoon salt
Potato Bacon Casserole

1. PREHEAT oven to 350° F
- 4 cups frozen shredded hash brown potatoes
- 1/2 cup finely chopped onion
- 8 ounces bacon or turkey bacon, cooked and crumbled
- 1 cup (4 oz.) shredded cheddar cheese
- 1 can (12 fl. oz.) * NESTLÉ® CARNATION® Evaporated Milk
- 1 large egg, lightly beaten or 1/4 cup egg substitute
- 1 1/2 teaspoons seasoned salt
Green Beans- Asian

1. In 10-inch skillet, heat oils over med heat
- ● 1 tsp Olive or Vegetable Oil
- ● 1 tsp Sesame Oil
- ● 2 cloves garlic, finely chopped
- ● 1/2 cup shiitake mushrooms , sliced
- ● Or 1 pkg (1oz) dried shiitake mushrooms, stems removed, rehydrated
- ● 1 box (7.4 oz) Cascadian Farm frozen french cut green beans w/ almonds, thawed and drained
- ● 1 tbsp tamari or soy sauce
Egg Sandwich on English Muffin

Place english muffin on plate
- ● 1 english muffin, split
- ● 1 large egg
- ● 2 strips ready to serve bacon, optional
- ● 1 slice american cheese
