  • 1 shallot or 1/2 onion, chopped
  • 5 oz baby spinach, roughly chopped
  • 2 cloves garlic, pressed or minced
  • scant 1 cup ranch dressing (I used Marzetti Simply Dressed)
  • 3 eggs, whisked
