Mock Risotto with vegetables

Heat oil and add onion and salt
- 1 Tbsp olive oil
- 1 medium onion diced
- 1/4 tsp salt
- 2 cups rice (instant brown rice)
- 4 cloves garlic chopped
- 1 1/2 cups reduced salt chicken broth
- 1 pound asparagus (or broccoli)
- 1 red pepper finely diced
- 1 cup thawed frozen peas
- 4 oz reduced fat cream cheese ( Neufchatel)
- 1/2 cup grated Asiago or Parmesan cheese
- 1/4 cup chives
Southwest Chicken Breasts

Directions For marinade, combine wine, oil, tarragon, and salt
- o 1/4 cup dry white wine
- o 2 tablespoons olive oil or cooking oil
- o 2 teaspoons snipped fresh tarragon or 1/4 teaspoon dried tarragon, crushed
- o 1/4 teaspoon salt
- o 6 small skinless, boneless chicken breast halves (about 1-1/4 pounds total)
- o 2 medium avocados, pitted, peeled, and chopped
- o 1 medium tomato, chopped
- o 1 clove garlic, minced
- o 2 tablespoons finely chopped seeded green chili peppers (jalapeno, serrano, Anaheim)
- o 2 medium green onions, finely chopped
- o 1 tablespoon snipped fresh cilantro
- o 1 tablespoon honey
- o 6 fresh lettuce leaves (optional)
- o 1 tablespoon lemon juice

- 1 jar (12oz) apricot preserves
- 1/2 cup water
- 1 flank steak
