Rinse lentils and combine with water
- 1/2 cup lentisl
- 1 1/4 cup water
- 3 slices bacon
- 1/2 cup chopped onion
- 1 1/2 cup French bread croutons
- 2 large garlic cloves minced
- 1.2 Tbsp Dijon mustard
- 1 1/2 Tbsp red wine vinegar
- 2 Tbsp olive oil
- 3 1/2 cup coarsely shredded Savoy cabbage

- 6 Tbsp reduced calorie mayo
- 3 Tbs

- 1 medium scallion minced
- 1 1/2 Tbsp lime juice
- 2 tsp sugar
- 1/2 tsp chili powder
- 15 oz canned black beans drained
- 1 1/2 cup cooked corn kernels
- 2 cups grape tomatoes
- 1 medium sweet red pepper cut into thin strips
- 8 cups romaine lettuce
Pomegranate-Walnut Chicken

Directions Brown the chicken in the vegetable oil and remove to drain on a paper towel
- • 3 1/2 lb. chicken
- • 2 Tbs. vegetable oil
- • 1 medium onion, chopped
- • 2 C. ground walnuts
- • 1/3 C. hot water
- • 2 Tbs. lemon juice
- • 2 C. pomegranate juice (or 1/2 C. pomegranate syrup)
- • 1 Tbs. tomato paste
- • Salt and freshly ground pepper to taste
- • 2 Tbs. sugar
