Whole Wheat Pumpkin Streusel Muffins

1. Preheat oven to 350 and line a muffin tin with cupcake liners or grease the pan
- Ingredients
- 1/3 c. butter or coconut oil, melted*
- 1/2 c. honey or unbleached sugar
- 2 eggs
- 1 c. pumpkin purée**
- 1 tsp. vanilla extract
- 1/2 tsp. cinnamon
- 1/2 tsp. ginger
- 1/4 tsp. ground cloves
- 1/2 tsp. salt
- 1 3/4 c. whole wheat flour
- 1 tsp. baking soda
- 1/4 c. hot water
- Streusel - Makes enough for 2 batches; freeze the leftovers
- 1/4 c. whole wheat flour
- 1/4 c. rolled oats
- 1/8 c. unbleached sugar
- 2 T. butter (remaining part of stick used for muffins)
- 1/4 tsp. cinnamon

1MIX all ingredients
- 2 cans (5 oz. each) light tuna in water, drained, flaked
- 1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
- 1 cup KRAFT Shredded Mild Cheddar Cheese
- 3/4 cup water
- 1 carrot, shredded
- 1/3 cup KRAFT Real Mayo Mayonnaise
- 2 Tbsp. CLAUSSEN Sweet Pickle Relish
Monterey Tortilla Casserole

1. Spray four 10- to 12-ounce baking dishes with nonstick coating
- 6 6 inches corn tortillas, each cut into 6 wedges
- 2 cups cubed cooked chicken
- 1 cup loose-pack frozen whole kernel corn
- 1 16 ounce jarsalsa verde
- 3 tablespoons light dairy sour cream
- 3 tablespoons snipped fresh cilantro
- 1 tablespoon all-purpose flour
- 1 cup crumbled Mexican Chihuahua® cheese or crumbled farmer cheese (4 ounces)
- Light dairy sour cream (optional)
- Snipped fresh cilantro (optional)
- Chopped tomato (optional)

Creamy Chicken Broccoli Bake

Preheat oven to 350. Set a pot of water to boil for noodles
- 3 chicken breasts cut into 2″ cubes
- 8 oz light cream cheese, cubed
- 1 can cream of mushroom soup (I used the fat-free)
- shredded parmesan cheese
- 1 head of broccoli cut into florets
- egg noodles (substitute no yolks for a light option)
- milk (as needed to thin sauce)

- 1 can (10 3/4 ounces) Campbell's® Condensed Cream of Mushroom Soup (Regular or 98% Fat Free)
- 1/2 cup milk
- 1 cup frozen mixed vegetables
- 2 cups cubed cooked chicken
- 1/4 of a 12-ounce package medium egg noodles (about 2 cups), cooked and drained
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon ground black pepper
- 1/2 cup shredded Cheddar cheese
