Arrabbiata with Broccoli & Tempeh Recipe

Start by bringing a large pot of water to the boil
- 1 broccoli, cut into small florets and stems
- 1 tablespoon olive oil
- 1 medium brown onion, finely chopped
- 4 cloves garlic, minced
- 1/3 cup good quality red wine
- 1 tablespoon unrefined cane sugar
- 1 teaspoon crushed red pepper flakes / chilli flakes
- 2 tablespoons tomato paste
- 1 tablespoon lemon juice
- small handful chopped fresh basil
- 1 teaspoon chopped fresh thyme
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon oregano (I used dried)
- 28 oz / 800g diced tomatoes (canned is fine)
- 8 oz / 250g tempeh, grated on a box grater
- 2 tablespoons chopped fresh parsley
- fresh ground black pepper
- fine ground sea salt
- fresh grated parmesan (optional)

For Pasta: Bring 3 qaurts water to a boil in a large saucepan & add pasta
- 2 cups Whole Grain Penne Rigate pasta
- 20 Cherry Tomatoes, sliced in half
- 2 tablespoons Extra Virgin Olive Oil
- 1 1/2 tablespoons garlic, minced
- 1 1/2 tablespoons Parsley
- 1 1/2 tablespoons Thyme
- 2 tablespoons Basil
- 1 cup Spinach (packed), thinly sliced
- 1/2 teaspoon Kosher salt
- Freshly cracked Black Pepper to taste
- 2 tablespoons crumbled Feta cheese
Mega Raspberry Scones

Preheat oven to 375. Line a baking sheet with parchment paper or a Silpat
- Scones:
- 4 cups whole wheat pastry flour (or unbleached all-purpose flour)
- 3 tablespoons aluminum-free baking powder
- 1 teaspoon fine-grain sea salt
- 1 stick unsalted butter (4 oz), chilled and cut into 1/4-inch cubes
- 3/4 cup fine grain natural cane sugar or granulated sugar
- 1 1/4 cups half-and-half ( or you can also use heavy cream or whole milk)
- 1 teaspoon vanilla extract
- zest of one lemon
- 2/3 cups raspberry preserves
- Glaze:
- 1/2 cup powdered sugar
- 1 tablespoon lemon juice
- zest of one lemon
Cauliflower Curry

Heat olive oil in large sauce pan until almost smoking, and saute the cauliflower florets until lightly browned
- 1 cauliflower, cut into florets, stems pieces roughly chopped
- 2 TBS olive oil
- 1 onion, chopped
- 8 quarter-size slices ginger, peeled
- 2 garlic cloves, peeled
- 2 Serrano peppers
- 2 tomatoes, chopped
- 1/2 cup yogurt
- 1 cup water
- 1/4 tsp ground nutmeg
- 2 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp garam masala
- 1/4 tsp ground turmeric
- small handful of cilantro, chopped

- 1/2 onion, diced finely
- coarse salt, to taste
