Apple Pie Smoothie

Sprinkle the chopped apples with 1/4 teaspoon cinnamon and a pinch of nutmeg
- 1 cup milk
- 1/3 cup vanilla greek yogurt
- 1/2 large honeycrisp apple, chopped
- 1 teaspoon vanilla extract
- 1 tablespoon graham cracker crumbs
- 1/2 teaspoon cinnamon
- 2 pinches of nutmeg
- pinch of ground cloves
- pinch of cardamom
Avocado and Sweet Corn Salad

Assemble the salad. Puree everything for the dressing in a blender or food processor
- Salad:
- 2 cups sweet corn kernels
- 1 avocado (pitted, peeled and cut into bite sized pieces)
- 1 cup tomatoes (cut into bite sized pieces)
- 1 cup black beans
- 2 green onions (sliced)
- 1 handful cilantro (chopped)
- 4 slices bacon (chopped and cooked)
- creamy salsa verde dressing
- Dressing:
- 1/2 cup salsa verde
- 1/2 cup buttermilk
- 1/2 cup mayonnaise
- 1 clove garlic
- 1 teaspoon sugar
- 1 lime (juice)
- 1/4 cup cilantro
Ultimate Veggie Burger

Combine the garbanzos, eggs, and salt in a food processor
- 2 1/2 cups sprouted garbanzo beans (chickpeas) OR canned garbanzos, drained and rinsed
- 4 large eggs
- 1/2 teaspoon fine-grain sea salt
- 1/3 cup chopped fresh cilantro
- 1 onion, chopped
- Grated zest of one large lemon
- 1 cup alfalfa sprouts, chopped (optional)
- 1 cup toasted (whole-grain) bread crumbs
- 1 tablespoon extra-virgin olive oil
- Avocado
- Tomatoes
Swamp Soup

Clean and chop the onion, carrot, celery and garlic
- 2 tablespoons olive oil
- 3 stalks of celery, chopped
- 4 medium carrots, chopped
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 1/2 tablespoon dried basil
- 1/2 tablespoon dried oregano
- One 28-ounce can tomato sauce
- 45 ounces diced tomatoes
- 1 1/2 teaspoons chicken or vegetable bouillon
- 1 1/2 cups water
- One 10-ounce package of frozen spinach
- 6 ounces swiss cheese
Warm Artichoke and Green Onion Dip

Preheat oven to 400 degrees
- 2 cans (14 oz. each) water-packed artichoke hearts, well drained, chopped
- 1 1/2 cups mayonnaise
- 1 1/2 cups finely grated high-quality parmesan cheese
- 1/3 cup, plus 2 tablespoons sliced green onions, green part only
- 2 tsp. minced garlic
- 1 1/2 tsp. chopped fresh thyme, or 3/4 tsp. dried thyme
- 1/4 tsp. kosher salt, plus more as needed
- 1/4 tsp. freshly ground pepper, plus more as needed

- 1/2 cup Earth Balance (or 1 stick unsalted butter)
- 1 cup Sugar in the Raw
- 1/2 cup applesauce (or 2 large eggs)
- 1-1/2 cups unbleached, all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/3 cup Silk (or regular milk)
- 1 teaspoon vanilla extract
- 1-1/2 fresh or frozen strawberries, sliced
- Dark chocolate chips
Apple Sangria

- 3 1/2 cups chopped Honeycrisp apples (about 2 lbs)
- 1/2 cup apple schnapps
- 1/4 cup honey
- 4 whole cloves
- Two 3-inch cinnamon sticks
- Two 1/4-inche slices of peeled ginger
- 1 large navel orange, quartered
- One 750-ml bottle of fruity red wine
- 1/4 cup club soda, chilled
- 4 thin horizontal slices cored Honeycrisp apples
Vegetarian Juicy Lucy's

Blend the tofu and potatoes together in a food processor and blender until well combined
- For Burgers:
- 1 package extra-firm tofu
- 1 small (or enough to make up 1 small) potato -- we used purple fingerlings, kept the skins on
- 1/2 cup whole wheat flour
- 3 tablespoons nutritional yeast
- 1/4 cup sesame seeds
- 2 tablespoons soy sauce
- 1 teaspoon curry powder
- 1 teaspoon cumin powder
- 1 teaspoon garlic powder
- Pepper to taste
- 2 squares of cheese
- Toppings:
- Two buns
- 1 large avocado
- Grainy mustard
- Sweet potato fries
- Sliced cheese
Sweet Potato and Brie Mac and Cheese

Cook pasta according to package directions
- 8 oz uncooked macaroni
- 1 cup sweet potato puree (bake a few sweet potatoes at 400°F for 1 hour, or until soft; puree flesh until smooth; measure out 1 cup)
- 1 cup milk
- 2 oz (about 4 Tbsp) 1/3-less-fat neufchatel cream cheese
- 1 cup freshly grated 50% reduced fat sharp cheddar cheese
- 1/2 cup good-quality double cream brie cheese, rind removed, cut into cubes
- Pinch of ground nutmeg
- Kosher salt and freshly ground black pepper, to taste
Chicken Tequila Burgers

- 2 cloves garlic, chopped
- ½-1 jalapeno pepper, seeded and chopped
- 2 chicken breasts (about 1 lb. total)
