Balsamic Onion Galette

For the Crust: In a food processor combine the flour, sugar and salt
- Crust:
- 1 cup flour
- 1/2 tsp sugar
- 1/2 tsp salt
- 6 tbsp cold butter, cubed
- 3 1/2 tbsp cold water
- Filling:
- 2 red onions, sliced
- 2 tbsp olive oil
- salt
- 2 tsp balsamic vinegar
- Goat cheese
- Parmesan cheese
Anti-Ramen Soup

In a large pot of boiling water, cook the noodles
- 2 1/2 tablespoons soy sauce
- 2 1/2 tablespoons ketchup
- 1/2 tablespoon rice vinegar
- 1/2 lb egg noodles, or any other noodle you prefer
- Sliced green onions (optional)
- Sriracha or other chili sauce (optional)
Honey Nutella Rice Krispie Treats

In a medium-sized microwave-safe bowl, combine honey and Nutella and microwave for 30 seconds
- 1/2 c honey
- 1/2 c Nutella
- 4 c Rice Krispies
Thai Peanut Soup

In a large pot, cook onions, peppers and garlic until tender (5 minutes)
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red pepper, diced
- 1 carrot, sliced
- 1/2 tsp cumin
- 1/2 tsp coriander
- 1/4 tsp cayenne
- 4 tbsp olive oil
- 2 1/2 cups diced tomatoes
- 1 cup coconut milk
- 1 cup natural peanut butter
- 1/2 cup vegetable broth
- juice from 3 limes
- 1 tsp salt
- cilantro, chopped
- dry roasted peanuts, unsalted, chopped
Winter Sangria

In a large pitcher or punch bowl, whisk together orange juice, orange liqueur and honey
- 2 cups no-pulp orange juice
- 3 to 6 ounces orange liqueur
- 2 tablespoons honey
- 1 cinnamon stick
- 2 blood oranges or clementines, supremed
- 1 Granny Smith apple (or other tart apple), cored and chopped into 1/4-inch cubes
- 1 Anjou (red) pear, peeled, cored and chopped into 1/4-inch cubes
- 2 liters sweet sparkling red wine, chilled (recommended: Rosa Regale)
- 1 liter lemon lime soda, chilled

- 1 1/2 c all-purpose flour
- 1/2 T baking powder
- 1/4 t salt
- 1/2 C (1 stick) unsalted butter, room temperature
- 1 c sugar
- 2 large eggs, room temperature
- 2 limes, zested and juiced
- 1/4 t vanilla extract
- 1/2 C buttermilk
- Tequila for brushing
- Frosting:
- 1 C sugar
- 4 large egg whites
- Pinch coarse salt
- 3/4 C (1 1/2 sticks) unsalted butter, room temperature
- 1 1/4 T freshly squeezed lime juice
- 2 T tequila
Chicken Chili Burgers

Blend the chipotle pepper and lime juice together in a blender/food processor until very smooth
- 1 lb ground chicken
- 1/2 cup drained and rinsed dark red kidney beans, very slightly mashed
- 1 small onion, very finely minced
- 1 chipotle pepper in adobo
- juice of 1/2 lime
- 1 teaspoon hot Mexican style chili powder (I used 1 tsp. ancho chili powder + 1/8 tsp. cayenne pepper)
- 1/2 teaspoon hot paprika
- 1/2 teaspoon garlic powder
- salt and pepper
- 4 hamburger buns

Chipotle Mac and Cheese

reheat oven to 350 degrees F
- 3 cups elbow macaroni, cooked and drained
- 6 tbsp unsalted butter
- 1/4 cup flour
- 1 tsp Kosher salt
- 1/2 tsp freshly ground black pepper
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 2 1/2 cups milk, half-n-half, or heavy cream, or a combination of any of these
- 1/4 cup roughly chopped chipotle peppers in adobo sauce
- 2 tsp adobo sauce
- 1/4 cup cilantro, roughly chopped, plus extra for garnish
- 8 oz mozzarella cheese, divided
- 4 oz chipotle cheddar cheese
- 4 oz sharp cheddar cheese, divided
- Up to 1/2 cup reserved pasta water, as needed
- 1/2 cup Japanese panko breadcrumbs
Apricot Oat Bars

Put an oven rack in the center of the oven
- Crust:
- 1 3/4 cups all-purpose flour
- 1 packed cup light brown sugar
- 1 teaspoon ground cinnamon
- 3/4 teaspoon fine sea salt
- 3/4 teaspoon baking soda
- 1 3/4 cups old-fashioned oats
- 1 cup (4 ounces) coarsely chopped walnuts
- 1 cup (2 sticks) unsalted butter, melted
- 1 egg, at room temperature, beaten
- 1 teaspoon pure vanilla extract
- Filling:
- 1 (13-ounce) jar apricot jam or preserves (about 1 1/4 cups)
- 8 dried apricots, chopped into 1/4-inch pieces (about 1/3 cup)
BLT Pasta

Bring a pot of salted water to boil
- 3/4 cup short (macaroni, rotini, rigatoni, etc...) pasta
- 2 slices bacon, cooked and chopped
- 1/4 cup grape tomatoes, sliced
- 1/3 cup lettuce, torn
- 1 green onion stalk, sliced
- 1 T. fresh parsley, chopped
- 1 heaping T. mayonnaise
- 1 t. dijon mustard
- Salt
- Pepper
