- 1 1/2 1½ tbsp. butter
- 1/4 ¼ cup roasted garlic paste*
- 1 1/2 1½ tbsp. flour
- 1/4 ¼ cup dry white wine
- 1 cup low-sodium chicken broth
- 1 cup shredded white cheddar cheese
- 1 head of broccoli, cut into florets and blanched until crisp-tender
- 1 boneless, skinless chicken breast, grilled and cut into bite size pieces
- Salt and pepper, to taste

In a large bowl, beat together all of the cupcake ingredients with a mixer
- Cupcake:
- 1 box white cake mix
- 1 (3.5 oz) package instant pistachio pudding
- 1 cup canola oil
- 3 large eggs
- 1 cup club soda
- Frosting:
- 1 1/2 cup whipping cream
- 1/2 cup milk (I used skim)
- 2 Tbsp. powdered sugar
- 1 (3.5 oz) package instant pistachio pudding
- 4-6 drops green food coloring
- 1/4 cup chopped pistachios, optional
Winter Vegetable Soup

In a large Dutch oven or heavy pot, melt butter over medium
- 2 tablespoons butter
- 1 medium onion, cut into 1/2-inch dice
- 2 garlic cloves, coarsely chopped
- coarse salt and ground pepper
- 1 pound acorn squash, peeled, seeded and cut into 1-inch chunks
- 1 bunch of kale (3/4 pound), ribs cut away and discarded, leaves torn
- 5 1/2 cups low-sodium chicken broth
- 1 can (14 ounces) cannellini beans (liquid reserved)
- 3 sprigs thyme
- grated parmesan, for serving (optional)

- 1 tablespoon butter

- 6 ounces frozen spinach, thawed
- 1/2 cup chopped roasted red peppers
- 1/2 teaspoon salt, divided
- 5 cups cubed French or Italian bread, crusts removed (about 1/2 pound)
- 4 large eggs
- 1 cup milk
- 1/4 cup heavy cream
- 1 tablespoon Dijon mustard
- Pinch freshly ground pepper
- 1/3 cup ricotta
- 1 cup gruyère, grated
- 1/2 cup parmesan, finely grated
