Preheat the oven to 275 degrees
- 12 plum tomatoes, halved lengthwise, seeds (not cores) removed
- 1/4 cup olive oil, plus more for drizzling
- 1 1/2 Tablespoons balsamic vinegar, plus more for drizzling
- 2 glarlic cloves, minced
- 2 teaspoons sugar
- kosher salt and black pepper
- 16 ounces fresh mozzarella
- 12 fresh basil leaves, julienned
Hot Caramelized Onion Dip

Melt the butter and heat the oil in a pan
- 1 tablespoon butter
- 1 tablespoon oil
- 4 large sweet onions (sliced)
- 1 4 ounce package of cream cheese (softened)
- 1/2 cup mayonnaise
- 1/2 cup parmigiano reggiano (grated)
- pepper to taste
Stuffed Turkey Burgers

Divide turkey into 4 equal sized rounds
- 1 1/4 pounds lean ground turkey breast
- 1/2 cup chopped roasted red peppers, divided
- 1/2 cup shredded part-skim mozzarella cheese, divided
- 1/4 teaspoons salt

- 3 cups self-rising flour
- ½ cup granulated sugar
- 2 Tbs freshly chopped chives

White Sangria

In a large punchbowl, combine the wine, vodka, peach schnapps, sugar and limeade
- 2 bottles sauvignon blanc (the Trader Joe’s two buck chuck works perfectly)
- 1/3 liter vodka
- 1 cup peach schnapps
- 1 Tbsp white granulated sugar
- 1 cup limeade
- 1 peach, cut in large cubes
- a handful of blueberries
- a handful of white grapes, halved lengthwise
- a handful of watermelon cut in large cubes
- apple juice frozen in ice cube trays
Salted Brown Butter Crispy Treats

In a large pot, melt butter over medium-low heat
- 4 ounces (1/4 pound or 1 stick) unsalted butter, plus extra for the pan
- 1 10-ounce bag marshmallows
- Heaping 1/4 teaspoon coarse sea salt
- 6 cups Rice Krispies cereal (about half a 12-ounce box)
- Butter (or coat with non-stick spray) an 8-inch square cake pan with 2-inch sides.
Ground Turkey with Potatoes and Peas

In a mini food processor or you can chop by hand finely chop tomato, garlic and cilantro
- 1 medium tomato
- 3 cloves garlic
- 1/4 cup fresh cilantro
- 20 oz 93% lean ground turkey
- 4 medium scallions, chopped
- 1 cup fresh peas
- 1 potato, peeled and diced into 1 inch cubes
- 8 oz can tomato sauce
- 3/4 cup water
- 1/2 tsp cumin, or to taste
- salt, to taste
- 1 bay leaf
Potato, Orange and Arugula Salad

Potatoes: Put an oven rack in the upper third of the oven
- Potatoes:
- Vegetable oil cooking spray
- 1 1/2 pounds baby potatoes, halved
- 1/4 cup extra-virgin olive oil
- Kosher salt and freshly ground black pepper
- Salad:
- 2 medium oranges
- 2 packed cups (2 ounces) arugula
- 1/2 cup (2 ounces) crumbled Gorgonzola
- 1/3 cup toasted chopped walnuts, see Cook's Note
- Dressing:
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon fresh orange juice
- 1 tablespoon champagne vinegar
- 1 tablespoon orange zest (from 1 medium orange)
- Kosher salt and freshly ground black pepper
Banana Oatmeal Surprise

In a large sauce pan heat water to boiling
- 3 cups water
- 1 cup Coach's Oats
- pinch of salt
- 2 large very ripe bananas, mashed well or pureed in blender or food processor
- 2 tablespoons sugar
- 1/2 tsp vanilla
- 2 tablespoons peanut butter
- chocolate syrup (optional)
- milk or half & half (optional)

Preheat the oven to 400 degrees and grease a mini-muffin pan
- 1 whole Egg, Room Temperature
- 1/3 cups Olive Oil
- 2/3 cups Milk
- 1/4 teaspoons Garlic, The Stuff In The Jar
- 1-1/2 cup Tapioca Flour Or Tapioca Starch
- 1 teaspoon Salt
- 3/4 cups Monterey Jack Cheese (shredded)
