Bubble Up Enchiladas

Preheat oven to 350 degrees
- 1 lb ground beef (can also use diced chicken, ground turkey)
- 1 onion, diced
- 1 10 oz can red enchilada sauce
- 1 8 oz can tomato sauce
- 1 can refrigerated biscuits
- 1 1/2 to 2 cups shredded cheese (I used 1 cup of sharp and 1 cup of Mexican blend)
Kentucky Butter Cake:

In a medium bowl whisk together the flour, sugar, salt, baking powder and baking soda
- Glaze:
- 3 cups all-purpose flour
- 2 cups white sugar
- 4 eggs
- 1 cup buttermilk, at room temp
- 1 cup (2 sticks) unsalted butter, at room temp.
- 2 teaspoons vanilla
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 cup white sugar
- 1/3 cup unsalted butter
- 3 tablespoons water
- 2 teaspoons vanilla
- combine all ingredients in a small sauce pan until melted, do not bring to a boil*
Low Country Smothered Pork Chops

Trim the excess fat from the chops and season well with salt, pepper, and cayenne
- 4 center-cut pork chops, 1-inch thick
- Salt and pepper
- Ground cayenne pepper (optional)
- 2 - tablespoons butter
- 1/4 - cup all-purpose flour, spread on a plate
- 2 medium green bell peppers, stemmed, cored, and membranes removed, cut into strips
- 2 - yellow onions, trimmed, cut lengthwise
- 3 - cloves garlic, minced
- 2 - cups chicken broth
- 2 to 3 dashes Worcestershire sauce
GREEN BEANS

In a large skillet, cook the bacon over medium heat until almost done, 5 to 6 minutes
- 1/4 pound bacon (about 5 slices), cut into 1/2-inch pieces
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon sugar
- 1/4 teaspoon dry mustard
- Couple dashes hot sauce, such as Tabasco
- 1 1/2 pounds green beans, trimmed and rinsed
- 1/3 cup jarred roasted red peppers, coarsely chopped
LEMON PEPPER CHICKEN

In a bowl combine all ingredients except the chicken
- 1 garlic clove, minced
- 2 teaspoons lemon pepper seasoning
- 1/2 teaspoon paprika
- 1 tablespoon olive oil
- juice of 1/2 lemon
- 1/2 teaspoon kosher salt
- 1/2 teaspoon dried oregano
- 2 boneless, skinless chicken breasts
- lemon wedges for garnish
Chili Cheese Dog Casserole

1. Cook turkey burger or lean ground beef until meat is browned and cooked through; drain
- 8 hot dog buns, torn into pieces
- 8 beef hot dogs, cut into round slices
- 1 1/2 cups shredded cheddar cheese
- 1 lb. lean ground beef or turkey burger
- 1 (16oz) can Chili Beans
- 1 (8oz) can Tomato sauce
- 1 (15 oz) can diced tomatoes
- 1 packet Taco seasoning
Double Cheese Pasta with Bacon

Cook pasta according to package directions
- 1 package pasta (16-18 oz.)
- 1/2 cup butter
- 1/2 cup flour
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon garlic salt
- 2 cups half and half cream
- 2 cups milk
- 4 cups shredded cheddar cheese
- 6 oz. provolone cheese (more or less)
- 1 lb bacon, cooked crisp and broken into pieces
- sliced mushrooms (optional)
Cheesesteak Pizza

Heat a tablespoon of olive oil in a skillet
- 3-5 steak slices, such as Steak Ums
- 1 onion, thinly sliced
- 1/2 green pepper, thinly sliced
- 1 cup fresh mushrooms, sliced
- olive oil
- 2 tablespoons butter
- 2-3 cloves garlic, minced
- 2 tablespoons flour
- 1 cup milk or half and half
- 2-1/2 cups shredded cheese such as provolone, mozzarella, or Italian blend
- salt and pepper, to taste
KID FRIENDLY CHILI

Brown ground beef and onions until there is no more pink in the meat then drain well
- 1 pound lean ground beef
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1 cup grated carrot
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 scant tablespoon white sugar
- (1) 12 ounce can tomato paste
- (2) 15 ounce cans kidney beans
- 4 cups beef broth
- corn chips
SLOW COOKER THAI PEANUT PORK

Lightly grease a slow cooker with non-stick cooking spray
- 1 (2 pound) pork loin
- 1 cup low-sodium teriyaki sauce
- 4 tablespoons rice vinegar
- 2 teaspoons chili sauce
- 1/2 teaspoon ground ginger
- 3-4 cloves garlic, minced
- 1 red bell pepper, seeded and sliced
- 1 yellow bell pepper, seeded and sliced
- 2 cups snow peas
- 2/3 cup creamy peanut butter
- 1 cup chopped green onions
- 1/2 cup chopped roasted peanuts
- 2-3 limes, cut into wedges
- Cooked rice or rice noodles
