Chicken Bacon Ranch Quesadilla

Heat a medium skillet over medium heat
- 1 large tortilla
- 2 slices cooked bacon
- 1-2 oz chopped chicken (I used Perdue chicken strips)
- 1 Tbsp chopped mushrooms
- 1-2 tsp Ranch dressing
- 1/3 cup shredded cheddar cheese
- cooking spray

- 2 Tbsp Cajun seasoning
- 2 tsp salt
- 1 tsp lemon juice
- 1 tsp white vinegar
- 1/4 tsp ground black pepper, or to taste
- 1 Tbsp white sugar, or to taste
- 4 skinless, boneless chicken breast halves
- Pasta
- 16 oz bowtie pasta
- 2 1/2 cups heavy whipping cream (can substitute evaporated milk)

Minced Clam Dip

- 1 can (8 ounces) minced clams

- Half of a white or sweet onion, chopped very fine
- 8 ounces of cream cheese, softened to room temperature

- 5 boneless chicken thighs (about 1.5 lbs of chicken)
- 1/4 cup raw honey
- 1/4 cup melted, butter

- 2 Tablespoons soy sauce
- 1 Tablespoon Curry Powder
- 1 garlic clove, minced
- 2/3 cup onions, diced

BBQ Pork Nachos

In a medium saucepan, reheat the pork with the BBQ sauce
- 8 -10 oz leftover BBQ Pork
- 1/2 cup BBQ sauce
- 4 oz tortilla chips

Oven-Fried Parmesan Chicken Recipe

- 1 beaten egg
- 3 tablespoons milk
- 1/2 cup grated Parmesan cheese
- 1/4 cup fine dry bread crumbs (I used Italian Style, just for a little more flavor)
- 1 teaspoon dried oregano, crushed
- 1/2 teaspoon paprika
- 1/8 teaspoon pepper
- 2 to 2-1/2 pounds meaty chicken pieces (breasts, thighs, and drumsticks)
