lionhouse potatoes augratin

Preheat oven to 350 degrees
- 4 large potatoes peeled and diced or sliced
- 1 medium onion, chopped (opt) – use 1 tsp. Onion powder instead
- 2 teaspoons kosher salt
- 4 tablespoons margarine or butter
- 1/2 cup flour
- 2 1/2 cups milk
- 1 cup whipping cream
- 1 1/4 teaspoons salt
- 1/8 teaspoon black pepper
- 2 cups cubed cooked ham (read notes below)
- 2 cups grated cheddar cheese
Lowcountry Shrimp and Cheese Grits

Directions In a saucepan, bring the water and salt to a boil
- 3 cups water
- 1/2 teaspoon salt
- 1 cup quick-cooking grits
- 1 (7 ounce) package garlic cheese spread
- 2 tablespoons butter
- 2 teaspoons olive oil
- 1 1/2 pounds fresh shrimp, shelled and deveined without tails
- 1 large tomato, diced

Bring a large pot of water to a boil
- 2-3 chicken breasts, cooked and cubed or shredded
- 2 tablespoons olive oil
- 2 garlic cloves, finely minced
- 1 medium onion, diced
- 1 jalapeno pepper, seeded and diced
- 1 (4 oz.) can diced green chilies
- 1/2 teaspoon salt
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 1/2 cups salsa verde
- 1 cup red enchilada sauce
- 1 can large black olives, cut in half (optional)
- 1 cup sour cream
- 2 cups shredded cheese
- 16 oz. pasta
Zucchini Pizza Casserole

- 4 cups shredded unpeeled zucchini
- 1/2 teaspoon salt
- 2 eggs
- 1/2 cup grated Parmesan cheese

Beat the eggs, cream, Parmesan, parsley, salt and the red pepper together in a bowl
- 2 eggs
- 1/4 cup Cream
- 1/3 cup Parmesan
- Fresh diced Parsley or dried flakes
- 1/4 tsp. Salt
- 1/2 tsp Red Pepper flakes
- (I doubled the Sauce recipe, and it was perfect)
- 1/2 lb. bacon

Preheat oven to 350F and grease a large loaf pan
- 1/2-1 cup seasoned bread crumbs
- 5 tablespoons grated dry parmesan cheese (Romano is a good choice, also)
- 5 tablespoons minced parsley (I use dried to save effort)
- 2 tablespoons finely minced garlic
- 1/2 teaspoon salt
- 1/2 teaspoon fresh ground pepper
- 2 lbs ground beef (not too lean)
- 2 eggs

Preheat your oven to 350 degrees
- for the syrup:
- 8-10 thick slices of Texas Toast
- 4 whole Eggs, at room temp
- 2/3 cup Eggnog, at room temp
- 2 tablespoons Whole Milk, at room temp
- 1/4 cup Butter, melted and cooled to room temp
- 3/4 teaspoon Real Vanilla Extract
- 1/4 teaspoon Cinnamon
- 1/8 teaspoon Fresh Grated Nutmeg
- 1/2 cup Maple Syrup
- 1/2 stick Unsalted Butter
- 1/4 teaspoon Kosher Salt, more or less to taste
Bacon Jalapeno Burgers with Chipotle Mayonnaise

For the Chipotle Mayonnaise: Mix together ingredients until combined
- For the Chipotle Mayonnaise:
- 1/4 cup mayonnaise
- 1-2 chipotle peppers
- 2 teaspoons adobo sauce*
- For the Burgers:
- 1 1/3 pounds ground beef of choice (we used 85/15)
- A sprinkle of salt, pepper, garlic powder
- 4 rounds of red onion
- 4 slices colby jack cheese
- 8 slices crispy cooked bacon
- 16-20 pickled jalapeno slices
- 4 pretzel rolls (or other rolls if you choose)
