NACHO MAC AND CHEESE

Bring a large pot of water to boil and cook pasta 7 – 8 minutes
- 2 cups dried elbow macaroni
- 4 tablespoons unsalted butter
- 1/2 medium yellow onion, diced
- 2 jalapenos, diced
- 1 (12 ounce) can evaporated milk
- 2 eggs, slightly beaten
- 2 cups grated medium cheddar cheese
- 1 cup grated jack cheese
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground cumin
- 1/4 teaspoon chili powder
- 2 tomatoes, diced
- 2 avocados, pit and skin removed, diced
Lasagna Soup

1. Heat the oil over medium-high heat in a large saucepan
- 2 teaspoons olive oil
- 1 pound of smoked sausage, casings removed
- 3 cloves garlic, minced
- 1 (32 ounce) container of chicken broth
- 1 (15 ounce) can of tomato sauce
- 1 (14 1/2 ounce) can of diced tomatoes with basil, garlic, and oregano
- 1/2 teaspoon salt
- 4 ounces of broken whole-wheat lasagna noodles (about 4 noodles)
- 3 tablespoons parmesan cheese
- 1/2 cup shredded mozzarella cheese
Spicy Pop Pulled Pork Sandwiches w/ Cilantro-Jalapeno Slaw

For the meat: Preheat oven to 300 degrees
- 1 whole pork butt (pork shoulder)
- 1 whole onion, peeled & quartered
- salt and pepper
- 2 cans Dr. Pepper soda
- 11oz can of Chipotle peppers in adobo sauce
- 2 heaping tablespoons brown sugar
- 12 whole good quality Kaiser or Deli rolls
- 12 tablespoons butter
- 1 16oz package shredded coleslaw mix
- 2 whole jalapenos, seeded & minced
- 1/2 cup whole milk
- 1/2 cup mayonnaise
- 1 teaspoon white vinegar
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1 bunch cilantro, chopped
Penne alla Vodka

Bring a large pot of salted water to a boil
- 1 (28 oz) can whole tomatoes, drained (liquid reserved)
- 2 tablespoons olive oil
- 1/2 small onion, minced (about 1/4 cup)
- 1 tablespoon tomato paste
- 2 garlic cloves, minced
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/3 cup vodka
- 1/2 cup heavy cream
- 1 lb penne (or other pasta shape)
- 1/4 cup reserved pasta cooking water
- 2 tablespoons minced fresh basil leaves
- Parmesan cheese, for serving
Fancy Schmancy Chicken Salad:

Measure and mix dressing ingredients, taste and adjust seasoning if needed
- For the Dressing:
- 1 cup Mayo
- 4 teaspoons Apple Cider Vinegar
- 6 teaspoons Honey
- 1 teaspoon Poppy Seeds
- Salt and Black Pepper, to taste
- For the Salad:
- 1 small Rotisserie Chicken, shredded in to bite size pieces {approx. 4 cups}
- 2 oz Pecans, lightly toasted then coarsely chopped
- 1 cup small Red Grapes {halved if large}
- 2 Celery Stalks {with leaves}, chopped small

- 1 cup yellow cornmeal
- 3/4 cup self-rising flour
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1/2 teaspoon cayenne
- 1/2 small sweet onion, finely chopped
- 1/2 jalapeno, finely chopped
- 4 green onions, sliced thin
- 1 large egg, beaten
- 1/4 cup grated Cheddar
- 1 cup buttermilk
- Orange dipping sauce, recipe follows
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 1/4 cup orange marmalade

- 2 Tablespoons Olive Oil
- 2 Tablespoons Butter
- 1 whole Medium Onion, Finely Diced
- 4 cloves Garlic, Minced
- 2 cans (15 Ounce Each) Tomato Sauce Or Marinara Sauce
- Salt And Pepper, to taste
- Dash Of Sugar (more To Taste)
- 1 cup Heavy Cream
- Grated Parmesan Or Romano Cheese, To Taste
- Fresh Basil, Chopped
- 1-1/2 pound Fettuccine

- 1 pkg Italian sausage, casting removed
- 2 coves garlic, minced
- 28 oz crushed tomatoes
- 1 1/2 teaspoon italian seasoning
- 1/4 red pepper
- 1 teaspoon salt, or to taste
- 2 cups water
- 12 oz spaghetti, broken in half
- 1/4 cup whipping cream
- 1/3 cup parmesan cheese
- 2 cups mozzarella cheese
