Parmesan Fish

For the sauce – In a small bowl combine mayo, lemon juice, lemon zest and basil
- 5 medium fish fillets
- 1/3 cup parmesan cheese
- 1 cup dry bread crumbs
- 1/2 teaspoon cayenne pepper
- 2 eggs (beaten)
- 1/2 cup white flour
- 1 pinch salt
- 1 pinch pepper
- Oil (for frying)
- Lemon Sauce-
- 6 tablespoons mayonnaise
- 2 teaspoons lemon juice
- 1/2 teaspoon grated lemon zest
- 1/2 teaspoon basil
CHEESY HAM AND POTATO SOUP

Bring water and salt to a boil; add potatoes and cook until tender
- 3 Med. red potatoes
- 2 cups water
- 1/4 teaspoon salt
- 1/4 - 1/2 c. onion (depending on personal preference)
- 3 Tbsp flour
- 3 tablespoons butter
- Black pepper
- 3 cups milk
- 1 – 2 cups shredded cheddar cheese (I really like Cheddar – Jack, too)
- 1 – 2 cups cubed cooked ham
Chocolate Chip Cookie Dough Peanut Butter Cups

In a small saucepan, heat butter until melted
- 2 1/2 cups milk chocolate chips
- 1/2 cup unsalted butter
- 1/3 cup packed brown sugar
- 1 teaspoon vanilla extract
- 1/4 cup creamy peanut butter
- 3/4 cup powdered sugar
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup mini chocolate chips
CHEESY CHICKEN RANCH LASAGNA

Combine evaporated milk, Ranch dressing mix, and pepper in a 3 quart heavy saucepan
- 2 (12 oz) cans evaporated milk
- 1 (1 oz) pkg. dry Ranch dressing mix (not the dip blend)
- 3 c. cubed chicken
- 1 med onion, diced
- 3 cloves garlic, minced
- 1 jalapeno, sliced and seeded
- 1/8 tsp pepper
- 1 (8-10 oz) lasagna noodles, cooked
- 1 1/2 to 2 c. cheddar cheese, grated
- 1 1/2 to 2 c. mozzarella cheese, grated
- 1 1/2 c. freshly grated parmesan cheese
- Parsley (optional)
RB BBQ Chicken

In a small saucepan, boil one can (or 1 1/2 cups) root beer until thick and syrupy, about 30 minutes
- 2 cans root beer or 3 cups, divided use
- 1/2 cup smoky barbecue sauce
- 1/2 cup Dijon mustard, plus 1/4 cup more for marinade
- brown sugar, if needed
- 1 lb. boneless, skinless chicken breasts
- 1/2 tsp salt
- 1 tsp pepper
- 1 TBSP paprika
- 1 TBSP garlic powder
- 2 tablespoons olive oil

- 4 tbsp of Litehouse Original Thousand Island Dressing or Fry Sauce
- Seasoned Salt
Shrimp Scampi

Cooking angel hair pasta or linguini according to package directions
- 2 lbs raw shrimp (peeled and deveined)
- 1 lb angel hair pasta (or linguini)
- 1 cup butter
- 2 shallots (minced)
- 8 garlic cloves (minced)
- 1/3 cup white wine
- 3 tablespoons lemon juice
- 1/4 cup fresh parsley (chopped)
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
Beer Battered Fish

Slice fillets into long strips, 3/4 inch by 1 1/2 inch cross section
- For the Beer Batter:
- 2 cups all-purpose flour
- 2 tablespoons double acting baking powder
- 1 tablespoon salt
- 1 tablespoon garlic powder
- 2 teaspoons sugar
- 2 teaspoon chili powder
- 1 teaspoon black pepper
- 3/4 teaspoon cayenne pepper (*Use more like a FULL teaspoon)
- 2 tablespoons light olive oil
- 2 cups- BEER (+plus enough to thin out the batter - about 1 cup or so)
- For the Fish:
- 2 pounds fish fillets, cut into 1-inch wide strips (May use any type of fish)
- 1 cup flour, for DREDGING
- PEANUT or CANOLA Oil for pan (or fryer)
HOMEMADE PINEAPPLE ORANGE SYRUP

- 1 1/2 C. Orange Juice
- 2 TBSP. Corn Starch
- 2/3 C. Brown Sugar
- 1/3 C. Sugar
- 1/2 C. Pineapple Juice
- 1/2 C. Corn Syrup
- 1 TBSP. Lemon Juice
- Zest of 1 Orange
- 1/2 tsp. Cinnamon
