To make honey mustard sauce- in a bowl whisk together mayonnaise, mustard, honey, and lemon juice
- 6 boneless skinless chicken breast halves (sliced into strips)
- 1 egg (beaten)
- 1 cup buttermilk
- 1 1/2 teaspoons garlic powder
- 1 cup all-purpose flour
- 1 cup seasoned breadcrumbs
- 1 teaspoon salt
- 1 teaspoon baking powder
- oil (for deep frying)

- 1/2 teaspoon chipotle powder (optional)
- 1 1/4 pound chicken breast, diced into bit size pieces
- 4 tablespoons olive oil
- 1/2 medium yellow onion, diced
- 1 red bell pepper, seeds and ribs removed, diced
- 1 green bell pepper, seeds and ribs removed, diced
- 1 (28 ounce) can tomato sauce
- 2 (15 ounce) cans black beans drained
- 1 (7 ounce) can diced green chilies, drained
Broccoli Cheese Soup

1. Chop your broccoli and toss it in a medium sized sauce pan
- 1 bunch broccoli
- 1/4 C butter
- 1/2 C chopped onion
- 3 T flour
- 2 C chicken broth
- 1 C broccoli water
- 2 C half and half
- 1/2 t Worcestershire sauce
- 1/2 t salt
- 2 C cheddar cheese, grated

- 1 (14 ounce) bag KRAFT Caramels, divided

Cajun Blackened Catfish

*In a small bowl, mix together the paprika, thyme, onion powder, garlic powder, salt, and pepper
- 2 Tablespoons paprika
- 2 teaspoons ground thyme
- 1 teaspoon onion powder
- 3/4 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 skinless catfish fillets, about 6 oz each (can also use tilapia or flounder)

- optional add-ins: 2 tbs. minced red onion, 1 chopped roasted red pepper, 1 cup black beans, 1 teaspoon sugar
PORK ROAST AND APPLES

Trim the roast of all big fat
- 2 pound LEAN pork roast
- 1/2 cup brown sugar
- .7 ounce DRY Good Seasons Italian dressing
- 1/4 teaspoon black pepper
- pinch of red pepper flakes (or to taste)

1. Cut each chicken breast into 3 large chunks
- Chicken:
- 4 large chicken breasts
- 2 sleeves Ritz crackers
- 1/4 t salt
- 1/8 t pepper
- 1/2 C milk
- 3 C cheddar cheese, grated
- 1 t dried parsley
- Sauce:
- 1 10 ounce can cream of chicken soup
- 2 T sour cream
- 2 T butter

- 1 tbsp minced garlic
- 1 tsp dried basil
- 1/2 cup soy sauce
- 1/2 cup ketchup
- 1/3 cup honey
