Spicy Black Bean Dip

Heat oil in a medium saucepan over medium heat
- 2 tbsp olive oil
- 1/4 large onion, diced
- 1 clove garlic, grated
- 1 (15 oz.) can black beans, drained and rinsed
- 1 chipotle in adobo, seeded and finely minced, plus 2 tbsp adobo sauce
- 1/2-1 cup vegetable broth
- Salt to taste
Shells and Cheese

Step 1: Cook shells according to package directions
- 8 ounces shells medium shells
- 1/4 cup butter
- 1/4 cup flour
- 1/2 teaspoon salt
- 1 dash black pepper
- 2 cups milk
- 2 cups shredded cheddar cheese (8 ounces)
- sliced green onions (optional)
Shirley Temple's with Homemade Cherry Grenadine

Heat the 4 cups of cherry juice over moderate heat until simmering
- 4 cups Cherry Juice
- 2 cups Sugar
- Lemon-Lime Sparkling Water
- Orange Slices, for garnish
- Maraschino Cherries, for garnish
- A few Swashbuckler-Sword Thingies :)
Peanut Butter and Jelly French Toast Sticks

Spread the peanut butter on 4 bread slices and the jelly on the other 4 slices, and combine to make 4 sammies
- 1/2 cup peanut butter
- 8 slices sandwich bread
- 1/2 cup jelly (any flavor)
- 5 large eggs
- 1/3 cup milk
- 2 teaspoons pure vanilla extract
- 4 tablespoons butter
- 1/2 cup maple syrup, warmed

- 1 cup Apricot Preserves
- 1/2 cups Ketchup
- 1/4 cups Soy Sauce
- 2 tsp Minced Garlic
- 1 tsp Sriracha Sauce. The original recipe called for 2 tsp hot sauce.
- 3 pounds Drumsticks (about 12)
Italian Pasta Salad

Step 1.) Bring a large pot of water to a boil
- 1 lb of angel hair pasta
- 1/2 green pepper (can use more)
- 1/2 red pepper (can use more)
- 1 cup broccoli & cauliflower, diced into tiny pieces
- 1-2 green onions
- 1/2 medium tomato (can use more)
- 1 (16 oz) bottle of Zesty Italian dressing or more if you like it ZEEEESTAAAAY!!! (but I wouldn't add more until you taste it the next day since the flavors will intensify overnight)
- 1/4 cup of black olives, diced
- Chopped pepperoni (I used turkey pepperoni), can also used chopped ham.
- *Optional ingredients: I like to kick this recipe up sometimes by adding in minced garlic, mild cheddar, cold peas or cucumbers. Experiement with it and make it your own!
Meatloaf

Preheat oven to 350 degrees
- Meatloaf:
- 1 cup Whole Milk
- 6 slices White Bread
- 2 pounds Ground Beef
- 1 cup (heaping) Freshly Grated Parmesan Cheese
- 1/4 teaspoon Seasoned Salt
- 3/4 teaspoons Salt
- Freshly Ground Black Pepper
- 1/3 cup Minced Flat-leaf Parsley
- 4 whole Eggs Beaten
- 10 slices Thin/regular Bacon
- Sauce:
- 1-1/2 cup Ketchup
- 1/3 cup Brown Sugar
- 1 teaspoon Dry Mustard
- Tabasco To Taste
CROCKPOT CHICKEN WITH BLACK BEANS AND CREAM CHEESE

Put everything except the cream cheese into your crockpot
- 6 frozen boneless, skinless chicken breasts
- 2 cups Pace Picante Sauce (mild, medium or spicy)
- 1 1/2 cups frozen corn
- 1 1/2 – 2 cups cooked red beans (black beans would be excellent, too. Be sure they are drained.)
- (2) 8 oz packages of cream cheese
Cheesy Broccoli Gratin

1. Preheat oven to 400°F
- 1/4 cup butter
- 1/4 cup flour
- 2 cups milk
- 1/8 teaspoon ground nutmeg
- 1/4 teaspoon thyme
- 8 oz cheddar cheese
- 24 oz frozen broccoli florets, thawed
- 1/3 cup panko bread crumbs
- 1/2 cup grated Parmesan cheese
CHERRY LIMEADE

Mix all ingredients into a large pitcher and serve cold
- 1-2 liter bottle Sprite or 7-up {I used diet}
- 3/4 cup fresh lime juice
- 1/4 cup grenadine
- maraschino cherries, lime wedges and ice {optional}
