- 1 1/2 lbs ground beef (ground shoulder roast is good)
- 1 slice bread (broken or chopped finely)
- 1 egg
- 1 small vidalia onions or 1 small type sweet onion, finely chopped
- 1 small type sweet onion, finely chopped
- 1 teaspoon table salt
- 1/4 teaspoon black pepper
- 4 tablespoons ketchup
- 1/2-2/3 cup whole milk or 1/2-2/3 cup half-and-half
- 1/2-2/3 cup half-and-half
- 4 tablespoons apple cider vinegar
- 2 -4 tablespoons dark brown sugar, packed firm (to taste)
- 1/2 cup ketchup
Italian Spaghetti

Heat olive oil in a large skillet over medium-high heat
- 1 lb spaghetti noodles (cooked)
- 1 1/2 lbs ground beef
- 2 tablespoons olive oil
- 1 medium onion (chopped)
- 2 garlic cloves (minced)
- 2 bay leaves
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- ground black pepper (to taste)
- 1 (6 ounce) can tomato paste
- 2 (16 ounce) cans tomato sauce
- 1 (28 ounce) can diced tomatoes
- 8 ounces fresh mushrooms (sliced)

Yogurt-Marinated Chicken & Creamy Greek Sauce

For the marinade, cut the chicken breasts into bite-sized cubes
- For the marinade
- 1 large chicken breast (about 1/2 pound)
- 1/2 cup plain, whole milk yogurt
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon kosher salt
- Freshly ground black pepper, to taste
- For the Greek sauce
- 4 tablespoons mayonnaise (regular or light)
- 1 tablespoons milk
- 1 tablespoon cider vinegar
- 3/4 teaspoon sugar
- 1/8 garlic powder
- Squeeze of lemon juice
- Kosher salt and freshly ground black pepper
- For the chicken
- 2 tablespoons olive oil
- 2 large garlic cloves, peeled and smashed
- 1/2 teaspoon dried oregano
- 1 tomato, diced
- 1/2 cucumber, diced

1. Get yourself a nice box of pasta
- 1 (16 ounce) box elbow macaroni or medium shell pasta
- 1 green pepper, chopped
- 1 onion, chopped
- 4 cloves garlic, chopped
- 1 T olive oil
- 1 pound sausage
- 2 (14.5 ounce) cans Italian Stewed Tomatoes
- 1 t cumin
- 1 t basil, dried
- 1 t oregano, dried
- salt and pepper
- 2-3 C cheddar cheese, grated

- * 1 (3 to 4-pound) boneless chuck roast
- * 1 teaspoon House Seasoning, recipe follows
- * 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1 cup thinly sliced onion wedges
- 3 cloves garlic, crushed
- 2 bay leaves
- 1 (10 3/4-ounce) can cream of mushroom soup
- 1/4 cup red wine
- 2 tablespoons Worcestershire sauce
- 1 tablespoon beef bouillon granules
- 3/4 cup water
Creole Meatloaf with Tomato Gravy

Preheat the oven to 350 degrees
- 1-1/2 pounds of very lean ground beef*
- 1 tablespoon of butter
- 1 medium onion, chopped fine
- 1/2 cup of green bell pepper, chopped fine
- 1 stalk of celery, chopped fine
- 3 cloves of garlic, minced
- 1/4 cup of canola oil
- 2 tablespoons of flour (for the roux)
- 1 (15 ounce) can of tomato sauce
- 1 can of water
- 1 tablespoon of Worcestershire sauce
- 1/2 cup of evaporated milk
- 1 egg
- 1/2 cup of seasoned bread crumbs
- 1/2 teaspoon of kosher salt
- 4 turns of the pepper grinder
- Pinch of cayenne
- Flour, for coating
- 1 tablespoon of canola oil, for brownin

Cook ground beef in a medium size skillet over medium heat
- 1 pound of ground beef
- 1 loaf of French bread
- 2 tablespoons of butter, melted
- 1/4 cup of ketchup
- 2 heaping tablespoons of sweet pickle relish
- 2 teaspoons of Dijon mustard
- 10 turns of the pepper grinder
- 1 envelope of dry onion soup mix
- 1/2 cup of beef stock (try lower sodium here)
- Chopped onion, chopped tomato and shredded lettuce, or optional toppings for garnish
BACON CHEDDAR BROCCOLI MASHED POTATO BITES

Cover potatoes in water in a large pan and bring to a boil
- 3 pounds potatoes, peeled and cubed
- 1 1/2 cups shredded cheddar cheese, divided
- 2 cups cooked and chopped broccoli
- 1 cup sour cream
- 1 cup mayonnaise (we used Ranch Dressing)
- 3 green onions, finely chopped
- 6 slices bacon, cooked crispy and chopped
TACO PASTA SALAD

Bring a large pot of water and salt to a boil
- Salt and pepper
- 1 lb. pasta
- 1 tbsp. EVOO
- 1 lb. ground beef
- 1 large onion, chopped
- 1 large jalapeno, halved and seeded, thinly sliced
- 4 cloves garlic, finely chopped
- 2 tbsp. chili powder
- 1 tbsp. ground coriander
- 1 1/2 tsp. ground cumin
- 1/4 cup tomato paste
- 1 1/2 cups chicken stock
- 2 cups shredded Monterey Jack
- 2 small plum tomatoes, seeded and chopped
- 1/2 small heart romaine lettuce, chopped
