Southern Style Potato Salad

Rinse and scrub potatoes and place whole in a large pot of salted water; bring to a boil
- 7 medium sized russet potatoes
- 1/2 cup of onion, minced
- 1 large stalk of celery, chopped
- 1 teaspoon of kosher salt
- 10 turns of the pepper grinder, or to taste
- 3 boiled eggs, chopped
- 1 cup of real mayonnaise
- 1 teaspoon of yellow mustard
- 1 tablespoon of chopped sweet pickle or pickle relish
- Paprika to garnish, if desired
Surprise Rocks

Combine the sand, flour, coffee grounds, and 3/4 cup water in a large bowl
- 2 c. sand
- 2 c. all-purpose flour
- 1 c. coffee grounds (leftover from brewing coffee in a coffee maker)
- 3/4 c. water + possibly 1/4 c. more
Skillet Chilli Mac

Heat a 12-inch non-stick skillet over medium heat
- 1 pound ground beef
- 1 onion, minced
- 3/4 tablespoon chili powder (add more if you want more heat)
- 1/2 tablespoon ground coriander (substitute ground cumin for a smokier flavor)
- 1/2 teaspoon salt
- 3 garlic cloves, minced
- 1 tablespoon brown sugar
- 2 (8 ounce) cans tomato sauce
- 2 cups water
- 8 ounces (2 cups) noodles (elbow macaroni or whatever you prefer)
- 1 cup corn
- 1 (4.5 ounce) can chopped green chiles
- 2 tablespoons fresh cilantro, chopped
- 2 cups shredded cheese (I used a combination of cheddar and monterey jack but you can use pepper jack or a mexican shredded cheese blend)

1. Wash your grapes thoroughly, you want them to be a little wet so the gelatin powder sticks to them

INSIDE-OUT CHICKEN POT PIE

Preheat oven to 350 degrees
- 1 can (16.3 oz) Pillsbury Grands Homestyle refrigerated buttermilk biscuits
- 1/4 cup butter
- 3-4 boneless skinless chicken breasts, cut into 1-inch cubes
- 3 medium carrots, chopped
- 3 medium stalks celery, chopped
- 1 medium onion, chopped
- 2 cloves garlic, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon dried thyme
- 1/2 cup all-purpose flour
- 4 cups chicken broth
- 1/2 cup heavy whipping cream
- 1 cup frozen peas
- 3 tablespoons chopped fresh parsley
Chili Cheese Frito Salad

Combine corn, peppers,onion, cheese, and mayo in a bowl
- 3 (14 oz.) cans of corn, drained
- 1/4 of a red pepper, diced
- 1/4 green pepper, diced
- 1/4 red onion, diced
- 1 cup grated cheddar cheese
- 1 1/4 cup mayonnaise
- 1 (9 1/4 oz) bag of chili cheese fritos
Guacamole Salsa

Peel and wash the tomatillos - they are usually found over by the cilantro & peppers, and have a husk on them
- 1 lb. tomatillos (or more if you want it thinner)
- 1 jalapeno pepper (or more if you like it spicy)
- 1/3 bunch cilantro
- 1 thick slice of onion
- 1 garlic clove
- 1 avocado
- 1 tsp. salt

In a large bowl combine the first seven ingredients
- 2 eggs, beaten
- 1 tbsp mustard
- 1 tbsp chili sauce
- 2 tsp Worcestershire Sauce
- 1 small onion, finely chopped
- 1 tsp seasoned salt
- 1 garlic clove, minced
- 1 lb ground beef (we use half ground beef & half turkey)
- 6 hamburger buns or a bed of lettuce

Peel and grate potatoes on the large side of a box grater
- Idaho potatoes
- 1 cup cheddar cheese
- 1 can cream of mushroom soup
- 1 teaspoon garlic powder
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons Ranch dressing mix
- 2 tablespoons bread crumbs
- 3 tablespoons butter, melted
SPICY CHICKEN BREAKFAST SANDWICHES

Place milk in a shallow bowl
- thin chicken breasts, halved
- 1/3 cup milk
- 1/3 cup flour
- 1/4 tsp. salt
- 1/2 tsp. pepper
- 1/2 to 1 tsp. cayenne, depending on how spicy you want to go
- 1/2 tsp. chili powder
- 1/4 tsp. garlic powder
- 1 tube buttermilk biscuits, 8-count
- Sliced pepper jack cheese
- Honey
- Vegetable oil
