Sauteed Apples

Directions In a large skillet or saucepan, melt butter over medium heat; add apples
- 1/4 cup butter
- 4 large tart apples - peeled, cored and sliced 1/4 inch thick
- 2 teaspoons cornstarch
- 1/2 cup cold water
- 1/2 cup brown sugar
- 1/2 teaspoon ground cinnamon
Popcorn Chicken Recipe

Step 1: In a shallow bowl beat together 1 egg and 1 cup of milk
- 4 boneless skinless chicken breasts (cut into small chunks)
- 2 cups all purpose flour
- 2 1/2 teaspoons salt
- 3/4 teaspoon pepper
- 1/8 teaspoon paprika
- 1/8 teaspoon garlic powder
- 1/8 teaspoon baking powder
- 1 egg (beaten)
- 1 cup milk
- 2 cups panko bread crumbs
- oil (for deep frying)
Pork Schnitzel and Apple Cider Braised Red Cabbage

or the Cabbage: Heat 2 tablespoons butter in a medium-sized dutch oven over medium-high heat
- For the Cabbage:
- 2 tablespoons butter
- 1/2 head of purple cabbage, sliced really thin
- 2/3 cup apple cider
- 2 tablespoon apple cider vinegar
- salt & pepper, to taste
- sprinkle of carroway seeds, optional (I left these out)
- For the Schnitzel:
- 1 pound (ish) of boneless pork chops
- Salt
- 2/3 cups flour
- 2 eggs, beaten
- 1 3/4 cups panko bread crumbs
- 1 teaspoon salt
- 1 teaspoon dried dill weed
- 1/2 teaspoon black pepper
- 3-4 tablespoons butter
- 2 tablespoons olive oil
Ham, Egg and Cheese Muffins

Heat the oven to 400° and grease the muffin tins
- 12 large eggs
- 1/2 cup milk
- 1/2 cup sour cream
- 1/2 tsp. pepper
- 1/2 tsp. dried dill weed
- 1-2 cups shredded cheese (I used a mixture of cheddar and Monterrey jack)
- 1-1/2 cups ham, cubed or chopped (I used a good quality lunch meat)
- Salt to taste (I didn't add much because the ham made it salty enough)
- 2 green onion, sliced thin (optional)
- 1 1/2 cups frozen shredded hash browns, partially thawed

Fry ground chuck in small pan
- 1 pound Ground Chuck
- 5 cups Bow Tie Noodles
- 3 cups Spaghetti Sauce (or Pizza Sauce, Whatever You Prefer)
- 1 Tablespoon Olive Oil
- 1 teaspoon Salt
- 1/2 teaspoons Garlic Powder
- 1 teaspoon Italian Seasoning (or More, Make It To Your Taste)
- 1/2 cups Mozzarella Cheese
- 1/2 cups Sour Cream

Add diced bacon to a large skillet over medium-low heat
- 6 slices bacon, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups lima beans
- 2 cups butterbeans
- 3 ears corn
- 2 tablespoons butter
- 1/2 cup half-and-half
- 1 10-ounce can hominy, drained
- 1/2 teaspoon dried thyme
- salt
- pepper
BEAN AND BACON SOUP

1. Chop up your bacon into chunks
- 3/4 pound bacon
- 1 small onion
- 4 large carrots
- 4 15 ounce cans Great Northern Beans
- 4 C water
- 2 bay leaves
- 1/4 t pepper
- 1 T beef bullion
- 3 T tomato paste
- 1 t liquid smoke
- 2 t Worcestershire sauce
- 2 T apple cider vinegar
- 1 t salt
- 1/8 t basil, dried
- 1/4 t thyme, dried
- 2 T sugar
- pinch red pepper flakes
SPICY ROASTED CHICKEN LEGS

- 24 whole Chicken Legs
- 2 sticks Butter
- 1 Tablespoon Hot Salt (or You Favorite Seasonings)
- 1/2 cup Lemon Juice (or To Taste)
JALEPENO CHEESE CORNBREAD MUFFINS

Preheat oven to 350ºF. Grease a regular size muffin pan
- 1 cup White Or Yellow Corn Meal
- 1 cup All-purpose Flour
- 1/4 cups Granulated Sugar
- 1 Tablespoon Baking Powder
- 1 teaspoon Salt
- 1 cup Milk
- 1/3 cups Vegetable Oil
- 1 Egg (large)
- 1-1/4 cup Medium Cheddar Cheese, Grated, And Divided
- 1 Jalapeno, Seeded, And Chopped Finely

If you are using fresh tomatoes, peel them and mash them with a potato masher in a medium-sized bowl
- For the Sauce:
- 7-8 garden tomatoes (if you don't have garden tomatoes, I would suggest using 1 large can of crushed tomatoes and 1-2 cans of diced tomatoes)
- 1/2 tsp salt
- dash pepper
- 4 cloves garlic, finely chopped
- 1 yellow onion, diced
- 2 Tbsp. dried basil
- 1 tsp. dried oregano
- 2 Tbsp. dried parsley flakes
- 1/2 tsp. sugar
- salt and pepper to taste
- 1 small can tomato sauce
- For the Chicken:
- 3 chicken breasts (pounded flat)
- 2 eggs, beaten
- 3 cloves garlic, chopped
- 1 c. Panko bread crumbs
- 1 Tbsp. italian seasoning
- 1/4 c. parmesan cheese
- salt and pepper to taste
- 6 slices provolone or mozzarella cheese
- 1 lb. spaghetti
