Broccoli Cheddar Cornbread

- 2 (8.5-ounce) boxes corn muffin mix
- 1/2 cup whole milk
- 2 cloves minced garlic
- 1 (8-ounce) container cottage cheese
- 4 large eggs
- 1 tablespoon salt
- 1 cup plus 2 tablespoons grated Cheddar
- 1 stick unsalted butter or margarine
- 1 medium onion, chopped
- 1 (10-ounce) package frozen chopped broccoli, thawed but not drained
CREAMY CAJUN SHRIMP PASTA

In a bowl, toss in the cajun seasoning and the shrimp
- 1/2 lb. Shrimp
- 8 oz. Rigatoni Noodles
- 1 Tbs. unsalted butter
- 1 Tbs. olive oil
- 4 tsp. cajun seasoning (we use Lawry’s)
- 4 Tbs. butter
- 3 1/2 c. heavy whipping cream (I substituted with milk for 2 cups worth, due to the challenge)
Chicken Spaghetti

In a large Dutch oven, fill 1/2 full with water; add salt and pepper if desired; add chicken breast halves
- 8 boneless skinless chicken breast halves
- salt and pepper
- 1 (12 ounce) package thin spaghetti
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 tablespoons butter or 2 tablespoons margarine
- 3 (10 1/2 ounce) cans cream of chicken soup
- 2 (4 1/2 ounce) jars sliced mushrooms
- 1/2 lb shredded sharp cheddar cheese
- 1/2 lb shredded Velveeta cheese
Clam Chowder

Place diced vegetables in a large pot and add just enough water to cover them
- My additions:
- 2 c. potatoes, peeled and diced
- 1 c. celery, diced
- 1 c. onion, diced (I use less)
- 2 cans minced clams
- 1/2 c. margarine
- 1/2 c. flour
- 1 qt. half-and-half
- salt and pepper
- a few strips of bacon, cooked and crumbled
- a little italian seasoning
Hearty Chili Mac

1. Cook beef and onion over medium heat until meat is no longer pink; drain
- 2 lbs ground beef
- 1 medium onion, chopped
- 1 can (46 oz) tomato juice
- 1 can (28 oz) diced tomatoes, undrained
- 3 celery ribs, chopped
- 3 Tbsp brown sugar
- 2 Tbsp chili powder
- 1 tsp salt
- 1 tsp prepared mustard
- 1/4 tsp pepper
- 1 can (16 oz) kidney beans, rinsed and drained
- 1 c. uncooked elbow macaroni
Griddle Steaks

1. Preheat griddle to 300 degrees
- Steaks, of your choice
- Seasoning Salt
- McCormick Grill Mates Montreal Steak Seasoning
Pretty in Pink Popcorn

Pop the popcorn. Stir in 1 drop of red food coloring with melted white chocolate
- all natural popcorn (I used salted)
- 1/2 cup white chocolate chips, melted
- 1 drop of red food coloring
- M&Ms
- sprinkles
Twice-Baked Potato Casserole

Cut skin off of baked potatoes* and cut into 1-inch cubes
- 6 Large Russet Potatoes, baked
- Salt and Pepper
- 6 slices Bacon, cooked and crumbled
- 8 oz Sour Cream
- 8 oz Mozzarella Cheese, shredded
- 8 oz Cheddar Cheese, shredded
- 4 Green Onions, sliced
Dreami Kiwi Lemonade

Using a blender, mix the ice cubes, kiwis, lemon juice, sugar and 1 cup water until smooth
- 2 cups ice cubes
- 8 kiwis, coarsely chopped, plus 1 kiwi, sliced, for garnish
- 1 1/4 cups fresh lemon juice (about 6 lemons)
- 1 cup sugar
- 1 cup water
Chocolate Chip Pudding Cookies

Preheat oven to 375 degrees
- 1 cup (2 sticks) Butter, softened
- 3/4 cup Brown Sugar
- 1/4 cup White Sugar
- 1 small pkg Instant Vanilla Pudding mix
- 2 eggs
- 1 teaspoon Vanilla Extract
- 2 1/4 cups All-Purpose Flour
- 1 teaspoon Baking Soda
- 1 pkg ( 12 oz) Milk Chocolate Chips
