Vegetable Lo Mein

In a small bowl mix together chicken broth and cornstarch
- 8 ounces linguini, spaghetti or vermicelli noodles (cooked until al dente)
- 1/4 cup vegetable oil
- 1 teaspoon dried red pepper flakes
- 2 cups fresh mushrooms (sliced)
- 1 carrot (peeled and sliced into thin strips)
- 1 red bell pepper (sliced)
- 1 onion (sliced)
- 2 tablespoons garlic (minced)
- 2 teaspoons ginger (minced)
- 1 green onion (chopped)
- 1 tablespoon cornstarch
- 1 cup chicken broth
- 1/4 cup hoisin sauce
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1/4 teaspoon curry powder
- salt and pepper (to taste)
Pico de Gallo

Mix together and allow to sit (the longer it sits, the better the flavors meld together)
- Directions:
- 7 firm Roma Tomatos- Diced
- 1/2 Medium Yellow Onion- Finely Diced
- 1-2 Jalapenos (remove the seeds if you want to tame the spice)- Finely Diced
- A large fist-full of cilantro- Chopped
- Juice of 2 limes
- 1 tsp Salt
- Black Pepper to taste
Puff Puff Pancakes

*Mix all of the ingredients together and then pour into a 9x13 pan
- 1/2 C Butter
- 2 C Flour
- 8 Eggs
- 2 C Milk
Mexicali Rice

Place your broth in a pot on the stove and get it boiling
- 1 Cup of Jasmine Rice
- 2 Cups of Chicken/Veggie Broth
- 1/2 Cup of Evaporated Milk
- 1/4 Cup of Sour Cream
- 1 Cup of Corn
- 1 Small Handful of Cilantro, Chopped
- 2 Adobo Peppers, Chopped (drop this to one for a little less spice)
- 1 7 Oz. Can of Diced Green Chiles
- 1 Cup of Diced Tomatoes
- 1/2 Cup of Shredded Cheddar Cheese
- 1/2 tsp of Chili Powder
- 1/2 tsp of Cumin
CHEESY SALSA RICE

In medium saucepan, add water, rice, butter, and salt
- 2 Cups Water
- 1 Cup Long-Grain White Rice
- 1 Tablespoon Butter
- 1/2 Teaspoon Salt
- 3/4 Cup Chunky Salsa
- 1/2 Cup Diced Green Peppers
- 1/4 Cup Heavy Cream
- 1/4 Cup Extra-Sharp Cheddar Cheese, shredded
- 1 Tablespoon Cream Cheese
- 1/4 Teaspoon Cumin
- 1/4 Cup Mozzarella Cheese, shredded (topping)
- 1/4 Cup Extra-Sharp Cheddar Cheese, shredded (topping)
Spaghetti with Pecorino Romano and Black Pepper

Add the grated cheese to a medium heatproof bowl
- 4 oz Pecorino Romano, grated fine, plus extra for serving
- 1 lb spaghetti
- 1 1/2 teaspoons salt
- 2 tablespoons heavy cream
- 2 teaspoons extra-virgin olive-oil
- 1 1/2 teaspoons black pepper
Slow Cooker Salsa Chicken

Spray the inside of your slow cooker with some nonstick cooking spray
- 4 boneless, skinless chicken breasts
- 1 cup salsa
- 1 (10 oz) can Cream of Chicken soup
- 1 packet taco seasoning
- 1/2 cup sour cream
Quick Steak with Gravy

Cut the cubed beef steaks into serving size pieces and dust them with pepper (no salt)
- 1 pound cubed beef steak (see note)
- 2 tablespoons vegetable oil
- 1 tablespoon flour (to add to gravy)
- little extra flour to coat the cubed steak
- (1) 4 serving size envelope of Lipton's Beefy Mushroom soup mix (see note)
- 2 cups water
- (no salt...there's salt in the soup mix)
- pepper to taste
Ground Beef Casserole

Brown ground beef, onion, bell pepper
- 1 lb lean ground beef
- 1 medium onion, chopped
- 1 medium green bell pepper, chopped
- 1 (1 lb) can chopped tomato, undrained
- 1/2 teaspoon salt
- 1 can cream of mushroom soup
- 1 (8 ounce) package noodles
- 1 cup shredded sharp cheddar cheese
Tempting Tortellini & Ham

1. In a large saucepan, cook tortellini according to package directions
- 9 oz cheese tortellini
- 1 c. peas
- 1/4 c. butter
- 1/4 c. all-purpose flour
- 1 1/4 c. fat-free milk
- 1/4 c. half and half cream
- 1 1/2 c. cubed, fully cooked lean ham
- 4 ounces fat free cream cheese, cubed
- 1/2 c. grated Romano cheese
- 1 tsp dried basil
- 1/2 tsp garlic powder
- 1/4 tsp pepper
