Hubby's Bruschetta

In a bowl, mix the tomato, onion, garlic, salt, pepper, basil, oregano and parsley
- 3 large tomatoes, chopped
- 1 onion, diced
- 1 Tbs chopped garlic
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp dried basil
- 1/2 tsp oregano
- 1 Tbs parsley
- 2 Tbs olive oil
- 2 Tbs balsamic vinegar
- 1 large loaf of garlic bread
- 2-3 C marbled Cheddar
CHINESE SWEET SOUR SPARERIBS

Cut spareribs into 1 1/2 inch pieces
- 2-4 lbs pork spareribs
- 2 tablespoon soy sauce
- 2 tablespoons flour
- 3 tablespoons salad oil
- 2-4 cloves garlic, crushed, peeled, minced.
- 2 bay leaves
- 1 small piece ginger root, crushed
- 2/3 cup vinegar
- 1 1/2 cups water
- 1 cup light brown sugar
- salt to taste
- fresh cracked black pepper to taste
Green Bean Casserole

Cut green beans in half if you like pieces to be a little smaller
- 2 pounds Fresh Green Beans, Ends Cut Off
- 4 slices Bacon, Cut Into 1/4 Inch Pieces
- 3 cloves Garlic, Minced
- 1/2 whole Large Onion, Chopped
- 4 Tablespoons Butter
- 4 Tablespoons All-purpose Flour
- 2-1/2 cups Whole Milk
- 1/2 cup Half-and-half
- 1-1/2 teaspoon Salt, More To Taste
- Freshly Ground Black Pepper, To Taste
- 1/8 teaspoon Cayenne Pepper
- 1 cup Grated Sharp Cheddar Cheese
- 1 jar (4 Ounce) Sliced Pimentoes, Drained
- Extra Milk For Thinning If Necessary
- 1 cup Panko Bread Crumbs
Cheesy Chili Mac

Set a 12-inch nonstick skillet over medium heat and add the oil
- 1 tablespoon vegetable oil
- 1 medium onion, minced
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 3 garlic cloves, minced
- 1 tablespoon brown sugar
- 1 pound ground turkey
- 2 cups water
- 1 15-oz can tomato sauce
- 8 oz (about 2 cups) elbow macaroni
- 1 1/2 -2 cups shredded Mexican cheese blend
Creamy Salsa Dip:

Cream together the cream cheese & sour cream
- 8 oz. Cream cheese (softened)
- 1/2 cup Sour Cream
- 1 1/2 cups salsa
Chicken Cakes and Remoulade Sauce

Melt the butter in a skillet over medium heat
- 2 Tbs. butter
- 1/4 cup vegetable oil (Add more as needed when frying)
- 1 Tbs. Creole seasoning (I used Tony Cachere's)
- 1 Tbs. Creole mustard (Or spicy brown mustard. Just don't use yellow mustard)
- 2 Tbs. Mayonnaise (Not Miracle Whip)
- 1 large egg, lightly beaten
- 3 cups chopped cooked chicken
- 1 clove minced garlic
- 4 green onions, sliced
- 1/2 red bell pepper, diced
- 1 cup Italian bread crumbs
- Remoulade Sauce
- 1 cup Mayonnaise
- 2 green onions, sliced
- 2 Tbs. creole mustard (Or spicy brown. Not yellow)
- 2 cloves minced garlic
- 1 Tbs. chopped parsley
- 1/4 tsp. ground red pepper
ROASTED CHICKPEAS

Preheat oven to 425 degrees
- 2 (15 oz.) cans chickpeas
- 1 tablespoon olive oil
- 1/2 teaspoon garlic salt
- 1/4 teaspoon cumin
- Dash of cayenne pepper
- Dash of ground black peppe
PINEAPPLE JELLO RINGS

1. Drain the pineapple juice from the can of pineapple rings
- 1 can of sliced pineapple rings
- 1 3-ounce package of cherry or lime Jell-O
Chicken and Cream Cheese Roll ups

Mix together cooked chicken, softened cream cheese, onion, mushrooms, and melted margarine
- 4 chicken breasts, cooked and cubed
- 2 packages crescent rolls (in the fridge section of the store- my favorite are Pillsbury- the store-brands usually don't roll-up as well!)
- 1 (8 oz) package cream cheese (low fat works fine for these), softened
- 1-2 Tbsp chopped onion (depending on how much you like)
- 1 small can of mushrooms (you could also use fresh if you prefer those)
- 2 Tbsp margarine OR butter, melted
Meatballs and Gravy

1. 1 Mix everything in crock pot
- 1 (11 ounce) can cream of mushroom soup
- 1 (2 ounce) envelope turkey gravy mix
- 1/2 teaspoon thyme
- 1 cup water
- 1 (10 ounce) can mushrooms
- 2 lbs frozen cooked meatballs
