Refried Bean Burritos with Hot Taco Sauce

Quick Refried Beans Melt bacon fat in a large heavy skillet over medium heat
- Quick Refried Beans
- 2 tbsp bacon drippings or oil
- 1/2 onion, minced
- 2 cloves garlic, made into a paste or minced
- 1-2 fresh jalapenos, minced (optional)
- 1 (15 oz) can fat-free, low sodium refried beans
- Copycat Taco Bell Hot Sauce
- 6 oz tomato paste
- 3 cups water
- 2 tbsp pickled jalapenos, minced
- 1 tbsp dried, minced onion
- 1 1/2 tbsp chili powder
- 2 1/2 tsp salt
- 2 tsp cayenne
- 2 tsp cornstarch
- 2 tsp white vinegar

Beat butter in large bowl with mixer until creamy
- 3.5 cups flour
- 1 tsp baking powder
- 1.5 cups salted butter softened
- 1 cup sugar
- 1 egg
- 1 tsp vanilla
- 4 (3 oz) pkg jello You can use any flavors you want

- 2 Tablespoons Butter
- 1 1/2 Cups Heavy Cream
- 1/2 Cup Reduced Fat Parmesan Cheese
- 1 1/2 Cups Frozen Broccoli Cuts
- 1 Garlic Clove, minced
- 1 Tablespoon Minced Parsley
- Salt & Pepper, to taste
Fried Mushrooms

In a large bowl mix flour, baking powder and salt
- 10 ounces whole fresh mushrooms
- 1 cup flour
- 1/2 cup cornstarch
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup water
- 2 cups breadcrumbs (preferably panko)
Corned Beef and Cabbage

Break out the ol crock-pot and spray it with a little cooking spray
- 1 Corned Beef (Choose whateve size you like)
- 1 Head of Cabbage - Cut into Quarters
- 1 Bag of Small Red Potatoe

Cook veggies in unsalted water until crisp-tender; drain
- 3 c. frozen broccoli, cauliflower, carrot mixture, loose pack
- 6 strips bacon ( I used turkey bacon)
- 1 (8 ozs) jar cheese spread (with pimento, if desired)
- (I substitute about 6 ozs. Velveeta)
- 1 (8 ozs) pkg. cream cheese, softened
- 1/3 c. milk
- 1/8 tsp. garlic powder
- 2 Tb. chopped parsley, optional

Pam's Lemon Meringue Pie

My sister, Pam, gave me this recipe--she knows that lemon meringue is my all time favorite!!
- 1 cup sugar
- 3 tablespoons cornstarch
- 1 1/2 cups cold water
- 3 egg yolks, beaten
- 1/4 cup lemon juice
- 1 tablespoon margarine
- 1 9 inch pie shell, baked
- 3 egg whites
- 1/3 cup sugar
REFRIED BEANS

-Place the onion, rinsed beans, jalapeno, garlic, salt, pepper, and cumin into a slow cooker
- 1 onion, peeled and halved
- 3 cups dry pinto beans, rinsed
- 1/4-1/2 fresh jalapeno pepper, seeded and chopped (I used about 1/4 because I wanted my kids to eat it and not think it was too hot)
- 2 tablespoons minced garlic
- 3 teaspoons salt
- 1 3/4 teaspoons fresh ground black pepper
- 1/8 teaspoon ground cumin (optional)
- 5 cups water
- 4 cups chicken bro

Preheat oven to 350ºF. Spray two mini iron skillets with non stick cooking spray and set aside
- 10 whole Baby Bella Or Crimini Mushrooms
- 4 ounces, weight Cream Cheese, softened
- 1/4 cups Grated Parmesan Or Mozzarella Cheese
- 1/4 teaspoons Dried Basil
- 1/8 teaspoons Dried Oregano
- Garlic Salt And Pepper, To Taste
- 1/4 cups Finely Diced Pepperoni
- 2 Tablespoons Finely Chopped Green Pepper
- 2 Tablespoons Finely Chopped Red Onion
- 2 Tablespoons Finely Chopped Black Olives
CREAM CHEESE DANISH

For the danish: Preheat oven to 350ºF and lightly grease a 9×13 inch baking dish
- 2 packages (8 Oz. Size) Refrigerated Crescent Roll Dough
- 2 packages (8 Oz. Size) Packages Cream Cheese, Diced
- 3/4 cups White Sugar
- 1-1/2 teaspoon Lemon Juice
- 1 teaspoon Vanilla Extract
- 2 teaspoons Sour Cream
- 1 cup Powder Sugar
- 1 Tablespoon Milk
- 1 Tablespoon Butter, Softened
