- 2 onions, minced
- 3 garlic cloves, minced
- 1 tbs vegetable oil
- 1 1/2 teas minced fresh thyme (1/2 teas dried thyme)
- 1/9 teas red pepper flakes
- 4 cups low-sodium chicken broth
- 3 cups water
- 1 lbs green split peas (2 cups), picked over and rinsed
- 4 carrots, peeled and cut into 1/2 inch thick pieces
- 2 bay leaves
- 1 smoked ham hock, rinsed
- 8 ounces ham steak, cut into 1/2 inch pieces
- 1 tbs lemon juice

Add cubed meat to a 9 x 13 inch pan
- 2 lb. - Beef tenderloin tips, Stew Meat, Chuck Roast or Chuck Eye (Cubed)
- 1 - 10.5 oz can cream of mushroom soup
- 1 – packet brown gravy mix
- 1 - packet lipton dry onion soup mix
- 1 – small can mushrooms
- 1 - cup water or ginger ale

Preheat oven to 350. Butter and flour (or spray with Baker’s spray) mini cake pans, or one large Bundt pan
- 1 box Duncan Hines White Cake mix
- 1 cup sour cream
- 3 oz cream cheese, softened
- 12 oz frozen lemonade concentrate, thawed
- 3 eggs
- 1 cup powdered sugar for glaze
BLT Pizza

Preheat oven to 375 degrees (or as directed for pizza crust)
- 2 pre-made pizza crusts
- 10 slices of bacon, chopped
- 2 cups of shredded cheese (I used mozzarella and Italian Blend)
- 4 tomatoes, diced
- 2 cups of lettuce, chopped
- 1/4 cup mayonnaise
- 3 tablespoons olive oil
- 1 avocado, diced
- Salt and pepper to taste
BAKED AND CRISPY CHICKEN TENDERS

- 1 package boneless, skinless, chicken tenders {I used Just Bare Gold N Plump brand}

1. Preheat your oven to 425 degrees
- 1 (9 inch, deep dish) pastry crust
- 4 eggs
- 2 C half and half
- 1/4 t salt
- 1/4 t pepper
- 1/4 t smoked paprika
- 1 C cheddar cheese, grated
- 1/3 C green onion
- 3/4 C diced ham

In a large skillet, melt the butter and add the onion and saute until translucent
- 3 Tablespoons Butter
- 1/2 Cup Onion, diced finely
- 1 Can Cream of Chicken Soup
- 2 Cups Medium Cheddar Cheese, shredded
- 1 Cup Light Sour Cream
- 1 1/2 Pounds Frozen Shredded Hashbrown Potatoes, thawed

- 1 lb flank steak
- 1/4 cup cornstarch
- 2 teaspoons vegetable oil
- 1/2 teaspoon ginger (minced)
- 1 tablespoon garlic (minced)
- 1/2 cup soy sauce
- 1/2 cup water
- 1/2 cup brown sugar
- 2 tablespoons rice wine
- 1/2 teaspoon red pepper flakes
- 2 green onions (sliced)
- 1 medium onion (sliced)
- Oil (for frying)
