Cheesy Chicken Tortilla Soup

In a skillet, add seasoning and diced chicken
- 1 envelope Taco Seasoning
- 1-1/2 pound Boneless, Skinless Chicken Breasts, Diced
- 1/2 cups Chopped Onion
- 2 T Butter
- 1/3 cups Flour
- 2-1/2 cups broth, chicken or vegetable
- 8-12 oz. 2% Milk Velveeta, cubed
- 8 oz. Shredded Monterey Jack or Mexican 4 cheese blend shredded cheese
- 1 jar salsa (any Variety)
- 1 cup half and half or milk
- Fritos, green onion, and sour cream (for garnish)
BROCCOLI RICE CASSEROLE

Preheat oven to 325. Grease an 8-inch square baking dish
- 1 small onion, chopped
- 1/2 c. chopped celery
- 1 (10 ozs) pkg. frozen chopped broccoli, thawed
- 1 Tb. butter or margarine
- 1 (10-3/4 ozs) can 98% reduced-fat condensed cream of chicken (or mushroom) soup, undiluted
- 6 ozs. 2% Velveeta, diced
- 1 (5 ozs) can (skim) evaporated milk
- 3 c. cooked (brown) rice
Collard Green and Artichoke Dip

Preheat oven to 425 degrees F
- 4 tablespoons butter
- 2 cloves garlic, chopped
- 1 shallot, chopped
- 1/4 cup all-purpose flour
- 1 pint heavy whipping cream
- 2/3 cup freshly grated Parmesan
- 1/2 cup shredded Cheddar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 lemon, juiced
- Dash hot sauce
- Dash Worcestershire sauce
- 2 (10-ounce) boxes collard greens, thawed and drained
- 1 (14-ounce) jar artichoke hearts, drained and coarsely chopped
Pizza dip

Step 1: In a small bowl mix together the cream cheese with oregano, parsley, and basil
- 1 (8 ounce) package cream cheese (softened)
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried parsley
- 1/4 teaspoon dried basil
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 cup pizza sauce
- 2 tablespoons green bell pepper (chopped)
- 2 ounces pepperoni sausage (chopped or sliced)
- 2 tablespoons black olives (sliced)
Buttermilk Fried Catfish

*In a large dish combine buttermilk and hot sauce
- 2 cups buttermilk
- 1/2 teaspoon hot sauce
- 2 lbs. catfish fillets, boneless and skinless
- 2/3 cup all purpose flour
- 2/3 cup yellow cornmeal
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon red pepper
- 1/2 teaspoon garlic powder
- Peanut oil for frying
Strawberry Cheesecake Cupcakes

Mix up the cake mix according to the box
- strawberry cake mix
- 1/4 c. sour cream
- Cheesecake Filling
- 8 oz. cream cheese
- 1 c. sour cream
- 1/2 c. milk
- 1 pkg. (3.4 oz.) instant vanilla pudding mix
- 1 carton (12 oz.) frozen whipped topping, thawed
- Strawberry Butter Cream
- 1/2 c. shortening
- 1/2 c. butter, room temperature
- 1/8 tsp. salt
- 1 tbsp. water
- 1 tbsp. strawberry preserves, melted
- 1/2 tsp. vanilla extract
- 1/2 tsp. strawberry extract
- 1/2 c. finely chopped strawberries (I used a pampered chef food chopper)
- 4 1/2 c. powdered sugar

- 1 Tbsp garlic salt
- 1 Tbsp chili powder
- 8 slices of cheddar or American cheese

Cherry Cheesecake Cupcakes

Preheat oven to 350. Line 28 cupcake cups with paper liners (I just did 24)
- Filling:
- 1 package (8oz) cream cheese, at room temperature
- 1/3 cup sugar
- 1 large egg
- 1/2 tsp vanilla extract
- Cupcakes:
- 1 package plain yellow cake mix (this means Duncan Hines)
- 1 package (3.4oz) vanilla instant pudding mix
- 1 cup whole milk
- 2/3 cup vegetable oil
- 3 large eggs
- 1 teaspoon almond extract
- 28 vanilla wafers

- 1 pkg. frozen breaded chicken strips (We use Tyson brand)
- 6 Tbl. Frank's Hot Sauce (It has to be Franks Hot Sauce, no other sauce will taste as good)
- 4 Tbl. water
- 1 1/2 c. brown sugar
