Orange Chicken

Place the chicken in a 1-gallon zipper-lock bag; set aside
- 3/4 cup low-sodium chicken broth
- 3/4 cup freshly squeezed orange juice
- 1 1/2 teaspoon finely grated orange zest
- 6 tablespoons white vinegar
- 1/4 cup soy sauce
- 1/2 cup dark brown sugar
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 teaspoon cayenne pepper
- 1 1/2 pounds boneless chicken thighs or breasts, cut into bite-sized pieces
- 1 tablespoon plus 2 teaspoon cornstarch
- 2 tablespoon cold water
- 8 small whole dried red chiles (optional)
- 8 thin strips orange peel
- 1 tablespoon peanut oil

- 1 onion, chopped
- 1 green pepper, chopped
- 2 c. beans (we like Kidney)
- 1 can Rotel
- 1 lb. ground turkey
- 3 16 oz. cans tomato sauce
- 3 Tbs. chili powder (or more to taste)
- 2 Tbs. garlic powder
- salt and pepper to taste

- 4 tablespoons butter
- 1 onion, finely chopped
- 1 carrot, finely chopped
- 1 rib celery, finely chopped
- 2 cloves garlic, finely chopped
- 1/4 cup all-purpose flour
- Salt and freshly ground black pepper
- 3 cups chicken stock
- 1 cup whole milk
- 1 (12-ounce) bottle light-bodied beer
- 2 large russet potatoes, peeled and chopped
- 2 cups grated extra-sharp Cheddar (about 8 ounces)
- Dash hot sauce

- 1 jalapeno pepper, seeded and finely chopped (or to taste)
- 1 small green bell pepper, seeded and chopped
- 2 -3 tablespoons chili powder (or can use 1 package mild or spicy taco seasoning mix)
- 1 1/2 cups refried beans (can use more)
- 1 (16 ounce) jar salsa (mild or spicy)
- 1 1/2 cups grated cheddar cheese, divided
- seasoning salt
- black pepper
- tortilla chips (use any amount desired)
- TOPPINGS
- 1 cup sour cream (can use more)
- 3 -4 green onions, chopped (can use more)

Bring water and salt to boil on medium high heat
- 5 1/3 cups water
- 1 1/3 cups grits
- 1 1/2 tsp salt
- 3 oz cream cheese
- 2 tbs butter
- 3/4 shredded cheddar cheese
SLOW COOKER CUBE STEAK WITH GRAVY

In a medium bowl, combine soups and package mixes and mix well
- 1 1/2-2 pounds Cube Steak
- 1 package Brown Gravy Mix
- 1 package of Au Jus mix
- 1 Can Cream of Chicken Soup, low sodium (or Cream of Mushroom Soup)
- 1 Can French Onion Soup, low sodium
Slow Cooker Ham & White Beans

- 1 lb package dried northern beans
- ham bone, hocks, shanks or diced ham (about 1 pound)
- 2 tsp onion powder
- 6 cups water
- salt & pepper to taste
