Spaghetti with Turkey Meatballs

- 3 slices white bread, crust removed and torn into small shreds
- 1/4 cup whole milk
- 3/4 pound ground turkey (recommended: 93 percent lean dark meat)
- 1/2 pound Italian turkey sausage, casing removed
- 1/4 cup grated Parmesan, plus more for serving
- 2 tablespoons finely chopped parsley leaves
- 2 cloves garlic, finely chopped
- Salt and freshly ground black pepper
- Vegetable oil, for pan-frying
- 2 tablespoons olive oil
- 3 cloves garlic, chopped
- 1 teaspoons red pepper flakes
- 1 (28-ounce) can crushed tomatoes, in thick puree
- 1 teaspoon dried basil
- 1 teaspoon sugar
- Salt and freshly ground black pepper
- 1 pound spaghetti, cooked al dente

Creamed Corn and Bacon

Saute the corn in the butter until tender
- 1 T. butter
- 4 c. fresh or frozen corn, thawed
- 1 c. heavy whipping cream
- 1/4 c. chicken broth
- 4 bacon strips, cooked and crumbled
- 1/4 tsp. pepper
- 1/4 c. grated Parmesan cheese
Glorious Cheese Grits

In a large saucepan bring water to a boil over high heat
- 4 - cups water
- 1 - cup long cooking grits
- 3 - cups sharp cheddar cheese, shredded
- 2 - tablespoons butter
- 1 1/2 - teaspoons garlic salt
- 1 - teaspoon Worcestershire sauce ( did not use)
- 1 - egg. beaten
- 1 - lb pork breakfast sausage, cooked, crumbled and drained
Deli Style Chicken Salad

In a suitable sized bowl, whisk together the mayonnaise, pickle relish, poultry seasoning, salt, and pepper
- 3 cups of cooked chicken, chopped
- 3 boiled eggs, peeled and chopped
- 1 cup celery, finely diced
- 1 cup of mayonnaise
- 1/4 cup of sweet pickle relish
- 1/2 teaspoon of poultry seasoning
- Salt & pepper, to taste
Bourbon Chicken over Rice – without the Bourbo

1. Cut your chicken into small 1-2 inch pieces with some clean kitchen scissors
- 5 boneless, skinless chicken breasts or chicken tenders (12 to 15)
- 2 Tablespoon oil
- 1 teaspoon garlic
- 1/4 Cup apple or pineapple juice
- 1/3 Cup brown sugar
- 2 Tablespoons ketchup
- 1 Tablespoon apple cider vinegar ( I did not add this) I did add 3 Tablespoons of chicken broth to the sauce instead.
- 1/2 Cup water
- 1/3 Cup soy sauce
- pinch red pepper flakes
- 1 Tablespoon cornstarch
Ultimate Baked Beans

Preheat oven to 350. Mix all ingredients except bacon together and spread in a 8x8 dish
- 1/2 lb ground beef, browned and drained
- 1/4 cup water
- 1/2 tbsp white vinegar
- 1/2 pkg onion soup mix (I pulse mine in the food processor to chop up the onions)
- 1 (15 oz) can Van Camps pork & beans
- 1/4 cup ketchup
- 1/4 cup brown sugar
- 1 tbsp prepared mustard
- 1 garlic clove, minced
- 1/2 lb bacon, cooked
Dirty Rice

In large skillet over medium heat, place celery, bell pepper, garlic, onion, parsley, and meat
- 3-4 Cups cooked rice (I used brown)
- 1 pound ground turkey, beef, or sausage (I used turkey)
- 1 1/2 Tablespoons Creole Seasoning (I use Tony Chachere’s), or less if too spicy
- 1 stalk celery, chopped
- 1 small onion, chopped
- 1/2 Bell Pepper, chopped
- 2 Tablespoons chopped or minced garlic
- 4 Tablespoons fresh chopped parsley (or 2 Tablespoons dried)
Slow cooker chicken and wild rice

Place chicken in bottom of slow cooker
- 4 chicken breasts (Can use fewer, can use bone-in or boneless)
- 1 can cream of mushroom soup
- 1 onion, chopped
- 1 box Long Grain and Wild Rice with Seasonings (I use Uncle Ben's)
Corn Fritters

Directions Heat oil in a heavy pot or deep fryer to 365 degrees F (185 degrees C)
- 3 cups oil for frying
- 1 cup sifted all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon white sugar
- 1 egg, lightly beaten
- 1/2 cup milk
- 1 tablespoon shortening, melted
- 1 (12 ounce) can whole kernel corn, drained
