Uncle Ben's Stuffed Spinach

Preheat oven to 350 degrees
- 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
- 3/4 cup bread crumbs
- 1/2 cup butter, melted
- 1/4 cup grated Parmesan cheese
- 3 large eggs, slightly beaten
- 1-1/2 tsp black pepper
- Garnish: sliced tomatoes, if desired
Best Pumpkin Bread

1. Mix pumpkin, sugar, oil, water, and eggs in large mixing bowl until well combined
- 2 cups Libby's Pure Pumpkin
- 3 cups sugar
- 1 cup Canola or Vegetable Oil
- 2/3 cup water
- 4 eggs
- 3-1/3 cups flour
- 2 tsp baking soda
- 1 tsp salt
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
Baked Potato Soup

Saute onion and celery in 1 tbsp butter until tender
- 1 cup chopped onion
- 1 cup chopped celery
- 3 tbsp butter
- 4 cups half-and-half
- 1-1/2 tsp salt
- 1-1/2 tsp pepper
- 3 tbsp flour
- 3 medium potatoes, baked, peeled and cut into 3/4-in cubes
- 1 cup shredded Cheddar cheese
- 1/2 cup fresh cooked bacon bits
- 1/2 cup sour cream
- chopped fresh chives
Crab Imperial II

Directions Preheat oven to 400 degrees F (200 degrees C)
- 1 pound crabmeat
- 1/2 cup mayonnaise
- 1 tablespoon fresh lemon juice
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon Old Bay Seasoning TM
- 1/2 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon dry mustard
- 1 egg, beaten
- 1/4 cup fresh bread crumbs
- 1 teaspoon paprika
- 3 tablespoons butter
Creamy Hatch Verde Tortilla Soup

Place all ingredients in large pot over medium heat
- 1 cup cooked chicken-chopped
- 1/2 cup milk, heavy cream, or half and half
- 1 cup chicken broth
- 12 ox. hominy
- 1 jar Cookwell and Company Hatch Verde Tortilla Soup
Quicksands Mango-Strawberryu Salad with Citrus Dressing

Dressing: Bring orange juice to boil in stainless steel, or other non-reactive (not aluminum) sauce pot
- CITRUS DRESSING:
- 2 cups orange juice
- 1/4 cup cornstarch, dissolved in 3/4 cup water to make a thick paste
- 1/2 cup olive oil
- 1/2 cup apple cider vinegar
- 1/2 medium jalapeno, or to taste
- 1 medium shallot
- 1/4 cup vcegetarian broth powder base (bouillon)
- SALAD:
- 2 heads romaine lettuce, washed and sliced crosswise into 1/2-inch strips
- 1 pint strawberries, washed, stemmed, and sliced
- 2 cups cooked mixed grains of choice, such as bulgar, barley, buckwheat groats, prepared according to package directions
- 1/4 cup chopped pecans,, toasted
- 3 ribs celery, chopped
- 4 fresh tangerines, peeled and segmented (or 1 can mandarin orange segments, drained )
- 3 ripe mangoes, peeled and diced
- 1 cup jicama, cut into julienne strips

- 6 ears corn
- 6 tablespoons butter, softened

- 1/2 stick plus 2 tbsp butter (6 tbsp)
- 2 tbsp flour
- 1/2 cup chopped onions
- 2 cups milk
- 2 dozen oysters, shucked and drained, with 1/4 cup oyster liquor reserved
- 1 tsp salt
- 1/4 tsp cayenne
- 1/4 tsp freshly ground black pepper
- 3 tbsp chopped parsley
- 1/4 cup chopped green onions
- 1 tbsp chopped garlic
