Chew: Clinton Kelly's Mac N Cheese Bites

Cook the macaroni according to package directions in salted water
- 1 pound Macaroni
- 2 tablespoon Butter
- 1 Onion diced
- 1 Garlic clove minced
- 1 teaspoon Paprika
- 1 teaspoon Dried Mustard
- Salt & Pepper to taste
- 2 tablespoon Flour
- 2 Cup Milk
- 1 pound White Cheddar
- 2 Cup Breadcrumbs
- 6 Eggs beaten
- Vegetable Oil for frying
Pulled Pork with Root Beer Sauce

Pulled Pork Roast: Trim fat from meat
- 2-3 lbs of pork sirloin roast
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 Tbsp cooking oil
- 2 med. onions, cut into thin wedges
- 1 cup root beer (not diet)
- 6 cloves of minced garlic sauce (see below)
- 8 to 10 hamburger buns, toasted

- 3 cups root beer (not diet)
- dash of bottled hot pepper sauce
- 1 bottle of chili sauce

1.In a medium-sized saucepan, melt the butter over medium-low heat and stir in the cream and pepper
- 1/2 cup (1 stick) butter
- 2 cups (1 pint) heavy cream
- 1/2 teaspoon black pepper
- 1 cup grated Parmesan cheese
Muffins: David's Banana Crunch Muffins

Preheat oven to 350°F. Line 12 regular or 6 Texas muffin cups with paper liners
- 2 cups all-purpose flour
- 1 cup whole-wheat flour
- 2 cups white sugar
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 2 eggs, lightly beaten
- 3/4 cup milk
- 2 tsp. vanilla extract
- 1 cup blended oil
- 3 very ripe bananas, mashed
- 1 cup granola
- 1 cup shredded coconut
- 1/2 cup crushed banana chips
Emeril's Banana Bread

- 10 tablespoons plus 1 teaspoon butter
- 1 cup mashed ripe bananas (about 2 large bananas)
- 1/2 cup sour cream
- 2 large eggs
- 1 1/2 teaspoons vanilla
- 2 cups cake flour
- 3/4 cup plus 2 tablespoons sugar
- 1 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup toasted, chopped walnuts
Marcela's Chicken Enciladas

Preheat the oven to 350 degrees F
- 9 tomatillos, husked and rinsed
- 1/2 medium white onion
- 1 serrano chile
- 1 yellow chile (guero)
- 2 cloves garlic
- 1/2 cup fresh cilantro leaves, loosely packed
- Salt and freshly ground black pepper
- 1/4 cup vegetable oil
- 6 (6-inch) corn tortillas
- 2 store-bought rotisserie chicken breasts, skinned and shredded (to yield 1 1/2 cups)

- For the sauce :
- • 2 cups granulated sugar
- • 5 large beaten eggs
- • 2 cups milk
- • 2 teaspoons pure vanilla extract
- • 3 cups cubed Italian bread , allow to stale overnight in a bowl
- • 1 cup packed light brown sugar
- • 1/4 cup (1/2 stick) butter, softened
- • 1 cup chopped pecans
- • 1 cup granulated sugar
- • 1/2 cup (1 stick) butter, melted
- • 1 egg, beaten
- • 2 teaspoons pure vanilla extract
- • 1/4 cup brandy

- 1 (16 oz) jar salsa
- 3 Roma tomatores
- 1/4 teaspoon Tabasco
- 1/3 cup finely chopped purple onion
- 2 tablespoons chopped fresh cilantro
David's Peach Fritters

With a wire whip, combine flour, salt, and baking powder
- 1 cup flour
- 1 tsp. salt
- 1 tsp. baking powder
- 2 eggs
- 1/3 cup milk
- 1 Tbsp. melted butter or vegetable oil
- 1-1/4 cups diced peaches sprinkled with a touch of cinnamon
- Granulated sugar in flat – sided bowl
- Oil for fryer or deep – frying pan
